My girls love artichokes. I cut off the end of the stalk and then peel the stalk - I just use a knife but you could use a veggie peeler, I think. Then I cut off the ends of the leaves (the thorn) with a kitchen scissors. Put them in a pot filled about halfway with water and simmer until a knife stuck between the stalk and the artichoke comes out easily - usually about 1/2 hour or 45 minutes. My girls dip the leaves in melted butter (non dairy butter, as is the case in our house) but as a kid, we used to dip the leaves in mayo. I still prefer it that way.

thanks, I use to make them as a teenager with my family, we did it the Italian way with breadcrumb stuffing and pasta sause..but can't have either of those.

I wanted a simple recipe, yours is perfect!

Oops...I forgot something...I also cut off the top 1/2" to 1" of the artichoke (the pointy end). I hope you like them!!

I rub some lemon across the top of the artichoke after cutting off the top. I also don't trim all the thorns unless someone is going to see them, because the thorns get soft after cooking, anyway.

Oh, and I put lemon slices and a few cloves of garlic in the water, as well.

Mayo is a popular dipping sauce as well, if that's your thing (yuck!)

      As far as I know and I have made severalonline searches, celiac disease disease has not been recognized as a cause of migraines or any eye problems. What I wrote must have been confusing.

      Interesting, when I suffered for a few months with ectopics I noticed that carbohydrates would cause indigestion and bloating in my stomach, then that would lead to my heart skipping beats, and I could feel it in my throat, it was very unsettling.  My last serious bout of this was after eating a Muller Rice Pudding for breakfast.   I happened to be wearing a 48 hour halter at the time and cardiology picked it up, but they weren't worried about what they saw. There was some British doctor who'd made some videos on the Vagus nerve that I remember watching at the time which made sense of what I was experiencing, there did seem to be some sort of connection.

      I asked my cardiologist about stopping vitamins.  He said his tests account for all detectable vitamins from sources other than food.  I only need to stop them for a couple of days.  He has me keep records of meds and vitamins I've ingested over the past 10 days and prior and he does his calculations.

      Reply to treats I try and eat to bring up the glucose. Sometime I get up 3 times a night and eat something. I don't think food is the issue. A lot of the food they say should help doesn't.  Many mornings my level is 59 and I feel sick, sometimes for hours. It has been recommended I go to an Endocrinologist.
