Baby With Milk/egg Allergy

Well, I got a call friday afternoon right before heading out the door to make the trek to the in-laws. Megan's RAST test showed a slight allergy to milk and eggs. I am breast feeding, so I have to alter my diet. I was dairy/casien free for a few months, but I added it back to my diet and she showed no changes, so I thought she was over it. I had no idea about the eggs. This may explain her recent eczema diagnosis. Anyway, I am very familiar with how to eliminate dairy/casien after going df/cf for my son for 20 mos., but I haven't a clue on the eggs. I'm going to look it all up on the allergy websites, just wondering if anyone has a good substitute for baking.

I pray that making these changes will stop her mysterious choking spells that have baffled the doctors!!!

Here are some easy substitures...

Baking

For each egg, substitute one of the following in recipes. These substitutes work well when baking from scratch and substituting 1 to 3 eggs.

* 1 tsp. baking powder, 1 T. liquid, 1 T. vinegar

* 1 tsp. yeast dissolved in 1/4 cup warm water

* 1 1/2 T. water, 1 1/2 T. oil, 1 tsp. baking powder

* 1 packet gelatin, 2 T. warm water. Do not mix until ready to use.

In reality most recipes you can just leave the egg out.

Vincent--really? That is good news! Do you have any more tips on just leaving the eggs out? Do you have to alter any of the other ingred.? Does this mean baked goods, or anything? Thanks! :)

It depends on the function of the egg in the recipe. Sometimes, like every single icecream recipe I have ever seen, they are mainly there as a presverative. In those cases, I never use it. Other times, like the the basic peanuttbutter cookies (Peanutbutter+egg+sugar) its a binding and extra liquid, and its harder to remove. Many of your premade mixes seem to work fine with out them.

The best way to know.. try it :D Sometimes I will be a bit heavier on my measurements of other liquids to make up for the loss. Some times I toss in some fruit presvers/jelly in,. like 1/4th cup or so per egg. Just wing it, thats all I do :)

And not jsut baked goods... this is anything I cook. There are certin ingredients that I often just skip, shuch as Egg, Salt, Vanilla Extract, Sugar, and others. I should clarifiy that... I never cook/bake with salt. :)

Those PB cookies are a staple at my house, except I use splenda. Jam/jelly wouldn't work because my husband is diabetic. Jarod would be very upset if he couldn't eat them too! which sub. would you recommend in those?

We use splenda too, but as for the egg, hmm not tried yet but my first attempt would be the gellitin one.

My 17 month old has egg allergy. For baking we use ENERG egg replacer powder which is also gluten free. It works great! Even made a birthday cake with it! I also use 1/4 C applesauce for 1 egg when baking things like cookies. My research also shows that:

For Binder:

1/2 large mashed banana

1/4 C pureed prunes

1 TBLS flaxseed mixed with 3 TBS water

1 1/2 TBS water 1 1/2 TBS oil and 1 tsp baking powder

1 packet unflavored gelatin with 1 C boiling water- 3 TBS of this mixture is = to 1 egg

1 Tbs apricot puree

1/4 C soft tofu

1/4 C soy milk

As Leavening

2 Tbs carbonated water 2 tsp baking flour

1tsp baking powder, 1 Tbs water 1 Tbs vinegar

Dissolve 1 tsp yeast in 1/4 C warm water

1 heaping Tbls soy flour and 1 Tbs water

1 Tbs bean flour and 1 Tbs oil

1 Tbs arrowroot powder mixed with 3 Tbs water

1 Tbs cornstarch + 3 Tbs water

2 Tbs gluten flour or white flour, 1 1/2 tsp corn oil, 1/2 tsp baking powder and 2 Tbs water

For Whipping

1/4 xanthan gum with 1/4 C water. let stand. It thickens, and can be whipped like an egg.

I know not everything is gluten free. But I hope this helps!

I am also breastfeeding my son who is egg allergy. I had to delete all egg from my diet. Not too hard but boy I can't wait to eat a good hard boiled egg again! :P

My son is also celiac.

Thanks for the tips. I had finally got into the gluten free baking groove and now another curve ball! I'm going to try the things you mentioned. Which one would you recommend as the best for baking gluten-free bread? I'm sure different subs work best with different foods.

Good for you for sticking to breast feeding. I know how hard it is, but I truly think it is what has kept Meg alive.

I agree that bf has kept my son alive as well. It was the ONLY thing that he was digesting. I remember feeling so upset before his diagnosis b/c he wanted to nurse every 2 hours, it was like having a newborn. But now I know he was just HUNGRY! Poor baby! I am glad I did not wean him. Breastmilk is so easily absorbable to the gut that it was the only thing he was actually processing.

I am studying to become a lactation consultant. May I send you a questionare about your bf experience?

Good luck on the egg thing. We have to carry an epipen. His reactions are so bad!

I would be thrilled to help. So many moms give up on breastfeeding and don't realize just how beneficial it can be. I nursed my son until 20 mos., when I found out I was expecting my daughter and had to go on meds that could hurt him. My daughter had open heart surgery at 9 days old and will have another in August. I've been pumping the whole time. They docs pushed formulas and she literally almost died from it. I would love to help some other mothers find out how important it can be to some kids and maybe help them avoid the heart ache we've had. Another thing most people don't realize is how much our diets affect our kids. I didn't know until I was in the middle of it. Just let me know how I can help.

Count me in, too--I nursed the first for 2 1/2 years, the second for 22 months, and the third for 2 1/2 years. I think bf helped my oldest son recover from open-heart surgery, and kept him from being profoundly autistic as well. One of these days, they'll find the cure for cancer in breast milk!

I used ener-g before leaving the vegan diet. I'm allergic to soy/wheat&gluten/dairy among a few other things. I got tested because of my infant son (3rd child). First and second child I was lacto-ovo, this one I was vegan. Have since learned that soy is bad, bad, bad and can also cause intestinal damage. His eczema has cleared up quite a bit, almost gone. Count me in on the survey too Taffy. I bf my first two children for 2 yrs 10 months each. I hope to be able to go that long with this one. He doesn't nurse as often as they did but is just as heavy. I'm also going to hold off on introducing solids until he is seven months old if I can. More breastfeeding and less vaccinations would make a huge difference in this world. IMHO :rolleyes:

Wow Taffy...that's a great list! We've been egg-free for about 6 years and I used the oil/water/bp for most substitutions. Occasionally I'll use applesauce or gelatin. I do not like the EnerG egg replacer.

Why dont you like the energ egg replacer? I have never had a problem with it. In fact we just made cookies with it and they turned out great!

We use milled flaxseed/water in items that the leavening isn't an issue, or add a little bit of gelatin too; I use soft tofu for others recipes. Let me add my name to the avoiding Egg Replacer (which does give a nice lift to baked goods). I think it makes some baked goods, esp. cookies, pretty brittle and I try to avoid high-sodium items. It's really just glorified baking powder.

I've yet to make a truly palatable egg free gluten-free bread. You know, with a nice chewy texture. So we mostly don't do bread anymore.

      @xxnonamexx, There's labeling on those Trubar gluten free high fiber protein bars that say: "Manufactured in a facility that also processes peanuts, milk, soy, fish, WHEAT, sesame, and other tree nuts." You may want to avoid products made in shared facilities.   If you are trying to add more fiber to your diet to ease constipation, considering eating more leafy green vegetables and cruciferous vegetables.  Not only are these high in fiber, they also are good sources of magnesium.  Many newly diagnosed are low in magnesium and B vitamins and suffer with constipation.  Thiamine Vitamin B1 and magnesium work together.  Thiamine in the form Benfotiamine has been shown to improve intestinal health.  Thiamine and magnesium are important to gastrointestinal health and function.

      Welcome to celiac.com @sha1091a! Your experience is a very common one. Celiac disease is one the most underdiagnosed and misdiagnosed medical conditions out there. The reasons are numerous. One key one is that its symptoms mimic so many other diseases. Another is ignorance on the part of the medical community with regard to the range of symptoms that celiac disease can produce. Clinicians often are only looking for classic GI symptoms and are unaware of the many other subsystems in the body that can be damaged before classic GI symptoms manifest, if ever they do. Many celiacs are of the "silent" variety and have few if any GI symptoms while all along, damage is being done to their bodies. In my case, the original symptoms were elevated liver enzymes which I endured for 13 years before I was diagnosed with celiac disease. By the grace of God my liver was not destroyed. It is common for the onset of the disease to happen 10 years before you ever get a diagnosis. Thankfully, that is slowly changing as there has developed more awareness on the part of both the medical community and the public in the past 20 years or so. Blessings!

      @EndlessSummer, You said you had an allergy to trees.  People with Birch Allergy can react to green beans (in the legume family) and other vegetables, as well as some fruits.  Look into Oral Allergy Syndrome which can occur at a higher rate in Celiac Disease.   Switching to a low histamine diet for a while can give your body time to rid itself of the extra histamine the body makes with Celiac disease and histamine consumed in the diet.   Vitamin C and the eight B vitamins are needed to help the body clear histamine.   Have you been checked for nutritional deficiencies?

      I found out the age of 68 that I am a celiac. When I was 16, I had my gallbladder removed when I was 24 I was put on a medication because I was told I had fibromyalgia.   going to Doctor’s over many years, not one of them thought to check me out for celiac disease. I am aware that it only started being tested by bloodwork I believe in the late 90s, but still I’m kind of confused why my gallbladder my joint pain flatulent that I complained of constantly was totally ignored. Is it not something that is taught to our medical system? It wasn’t a Doctor Who asked for the test to be done. I asked for it because of something I had read and my test came back positive. My number was quite high.Are there other people out here that had this kind of problems and they were ignored?

      Welcome to celiac.com, @EndlessSummer! Do you react to all vegetables or just specific kinds or families of them? What you describe with green beans sounds like it has an anaphylaxis component. Like you, walnuts are a problem for me. They will often give me a scratchy throat so I try to avoid them. Does it matter if the vegies are raw or will-cooked in how you react to them?
