Turkey Meatballs

Turkey meatballs

¾ lb ground turkey

3 uncooked turkey sausages*

3-4 Tbsp pesto sauce**

½ log of polenta, crumbled

1 egg

pepper

Squeeze sausage out of casing. Combine with ground turkey. Add in egg and pesto sauce. Add crumbled polenta and pepper.

Shape into 1Tbsp meatballs. Brown in a frying pan. Cover with red sauce of your choice and simmer 10 minutes (or until cooked).

Serve over polenta.

NOTES:

*Some sausages (especially flavored sausages) can have gluten. I don't know which brand I used but they were the fatter sausages, not the small breakfast sausages.

**I try to get the fresh pesto sauce in the deli case, but some stores don't have safe versions. I use the stuff in the jar if I can't find gluten-free fresh stuff. Some pesto sauces contain dairy and/or pine nuts.

This would also make a really good meatloaf recipe but I've never tried it. I have no idea how to make real polenta from scratch but you could use that too.

I use a similar recipe except that I add instant mashed potatoes (gluten-free of course), to the meat to bind it together and keep it together...

      Shingles is dormant and related to chicken pox when one has had in the past.Shingles comes out when stress is heightened.I had my 3rd Shingles in 2023.

      Oats naturally contain a protein called avenin, which is similar to the gluten proteins found in wheat, barley, and rye. While avenin is generally considered safe for most people with celiac disease, some individuals, around 5-10% of celiacs, may also have sensitivity to avenin, leading to symptoms similar to gluten exposure. You may fall into this category, and eliminating them is the best way to figure this out. Some people substitute gluten-free quinoa flakes for oats if they want a hot cereal substitute.
