I was looking on the internet for recipes that would make ground beef taste like Taco Bell.

This is what I found (has flour in EVERYTHING!)

Thanks for moving this, Mods. :)

I actually just use plain ground beef and whatever herb/spices I feel like. I usually include cumin and a dash of cayenne or chipotle pepper.

Disappointing about Taco Bell .... I always loved that place.

Taco Bell in our house is referred to as "Taco Hell"....seems pretty fitting for us Celiacs!

(but, my guilty secret is that a few times a year, i have something awful of a craving for taco hell. most of the time, the thought of it makes me want to barf. but....every so often, it seems like heaven)

I was having the same craving and figured out on the internet someone surely could reproduce that flavor. I think I'll try to replicate this weekend, but I'll omit the flour.

You can try corn starch instead.

You can try corn starch instead.

Bob's Red Mill sells gluten-free all purpose flour, and I would think that you could use that or any number of flour blends that can be found when searching gluten-free recipes.

I try to avoid all grains. I can't think what the flour would add taste-wise. Texturewise it probably makes the meat less greasy.

I made this tonight, without any added flour and starches. It was delicious! I can see why they have you put it in, the meat was pretty greasy and having a lot of grease floating around in your taco shell just isn't pleasant.

Check out the thread on the top secret restaurant recipe cookbooks. A website is referenced and you can find the top-secret taco bell recipe there (as well as many other restaurant faves). I made it and substituted corn starch for the flour - it was pretty good - tasted close to taco bell.

Others have commented on their favorite taco filling, but if you are craving an old fave from your pre-gluten-free days, check this one out.

If you can eat corn, you can try using masa flour. It gives such a distinctive Mexican taste. I love it in my chili. Which thank god I can still eat. Whew.

More great tips, and a good excuse to shop at M&S and also buy more iced buns!   I wish we had an ASDA near us, as the few times we've been to one their gluten-free pasta range seemed very reasonably priced compared to other shops.  Thanks so much, @Russ H.

I hope you are on the mend soon. About 1 in 5 people who contracted chicken pox as a child go on to develop shingles in later life - it is not uncommon. There are 5 known members of the herpes virus family including chicken pox that commonly infect humans, and they all cause lifelong infections. The exact cause of viral reactivation as in the case of shingles or cold sores is not well understood, but stress, sunburn and radiotherapy treatment are known triggers. Some of the herpes viruses are implicated in triggering autoimmune diseases: Epstein-Barr virus is suspected of triggering multiple sclerosis and lupus, and there is a case where it is suspected of triggering coeliac disease. As to whether coeliac disease can increase the likelihood of viral reactivation, there have been several cohort studies including a large one in Sweden suggesting that coeliac disease is associated with a moderate increase in the likelihood of developing shingles in people over the age of 50. US 2024 - Increased Risk of Herpes Zoster Infection in Patients with Celiac Disease 50 Years Old and Older Sweden 2018 - Increased risk of herpes zoster in patients with coeliac disease - nationwide cohort study

BFree bread is fortified with vitamins and minerals as is ASDA own-brand gluten-free bread. All the M&S bread seems to be fortified also.

You might try Heallix.  It's a silver solution with fulvic acid. I just put the solution on with a cotton ball.  It seemed to stop the nerve pain. Again,  not in your eyes or ears.   Go to heallix.com to read more about it and decide for yourself Also,  I do think nerve and celiac combined have a lot to do with your susceptibility to shingles breaking out.
