I think applesauce would work particularly well with the flavor--I was thinking of trying that next time too since I really like to stay away from sugar. I was surprised at how fluffy the seeds got when I ground them up--very workable as a "flour".

Can nae believe all the snaugh up north!! Both me kids don't have work today--I'm so relieved they don't have to be driving....we're having a cold but sunny morning here B)

I looked at the old oat bran muffin recipe and a couple flax muffin recipes and this is what I came up wif:

Flaxseed Muffins

1 1/2 cups ground flax seed

1/2 cup brown sugar (next time, I'm trying 1/4 cup--these were plenty sweet)

1 tbsp. baking powder

1/2 tsp. nutmeg

1 1/2 tsp. cinnamon

1 cup milk

1 egg

1 tbsp. vanilla

Pre-heat oven to 350. Mix all ingredients until well combined. Grease muffin pan or use paper liners (I used liners). Fill about 2/3 full (I used a 1/4 cup measuring cup to fill). Bake at 350 for 25-30 minutes. Makes 12 muffins.

They would be good with raisins and/or nuts mixed in, too.

Believe it or not, I ate a total of 3 yesterday and 2 this morning for breakfast and things could have not gone better in the bathroom! :P Flax is supposed to be good for "IBS"--and so far it's living up to it's word. (and I am prone to D--never C) ;) I think the idea is that the soluble fiber absorbs excess fluid in the digestive tract and that people with C should drink a ton of water when they consume flax. I'm just drinking normally.

That would taste delicious, but they don't really need any additional moisture. Even the second day, they're pretty moist inside. I may try it wiht a little honey sometime, though.

Bunnie . . . get thee a job at Whole Foods toot sweet!!! . . . I need your 20% discount!! I just spent $16 on "natural" food dye. :o Three tiny little bottles of beet, cabbage, and something else yellow. It did include directions on how to make green, purple and orange :lol: Really? :lol:

I think (fake) blue dye was a major contributor in the recent Skeeter episode. I can't tell for sure without testing it out and I really don't want to do that . . . she's on a medication now that I want her off of as soon as possible and I don't want to be the cause of any delay.

I love Whole Foods, although many's the time I go in there for a few Lara bars or sumphin and come out with 2 bags totaling $75! :rolleyes::lol:

Makes no difference here, unfortunately. . ...... . . honey is a HUGE no-no for me -- haven't had it in ages, as it is just like table sugar and causes a big spike. :( Maple and corn syrup are the same - - in fact, I use both of these for my low blood-sugar reactions, and consequential eye-turning hairstyles......... ... ..<_<

Sugar is a curious and sometimes dangerous thing.....since I've all but cut it out, things like those muffins taste very (actually too) sweet to me now. I already halved the amount in the original, and still.....I also have to keep track of my blood pressure, per my internist, and find that it greatly affects the numbers. I'm not clear on exactly why, but there's most definitely a correlation with me, anyway, and not just a few points either. It was running 160/95 on 2 meds, and now it's right around 120/72 or so with half of one of the meds.

For that alone, I will continue to eschew it :)

When you use maple syrup: Do you sub evenly for sugar? Do you have to make allowance for the extra liquid? UGH OH! Speaking of allowance - I owe the teens.

It really depends on the recipe. Pattie's recipe would probably be very forgiving, not all are.

I have never tried it. I have had good luck with Stevia. It doesn't seem to affect my blood sugar levels, and it seems to do okay when heated....

Agave nectar definitely has some sugar in it, it's just supposed to process 'slower'. I guess if stevia works, stick with it, right? If it ain't broke, don't fix it!

It's been raining straight for the last 12 hours or so.....infinitely thankful that it's not snaugh. Me sons got well over 3 feet between last weekend and Wednesday--Matt's work was closed yesterday, he went in today at noon for what he was told was a delayed opening and when he arrived, no one else was there. All that driving on icy roads with traffic lights that are not working for naught :angry:

Took the computer to the Geek Squad today. It has one of those viruses where it says "you have a virus. You must buy our program." Geeks said the computer is too old & not worth fixing. I'm now stuck fighting the teenagers to use the computer in the dungeon.

I know how you feel. I've been a stay home mom for 14 years & done the job too well, maybe. They really don't need me too much. They can fix food, grocery shop, do laundry & clean if they have to. The oldest can drive. I've been trying to think of what to do with the rest of my life. It seemed pretty hard a few months ago when I was always exhausted & couldn't go far without huffing & puffing. I got diagnosed with extreme anemia & Celiacs. The massive doses of iron & B12 have given me more energy & now I think I must figure out what to do with myself. I'm thinking 20 year old Sports Illustrated swim suit model.

Hope that wasn't too depressing for this forum.

      Hi Jane: You may want to try the D3 I now take. I have reactions to fillers and many additives. Sports Research, it is based in the USA and I have had no bad reactions with this brand. The D3 does have coconut oil but it is non GMO, it is Gluten free, Soy free, Soybean free and Safflower oil free.  I have a cupboard full of supplements that did not agree with me -  I just keep trying and have finally settled on Sports Research. I take NAKA Women's Multi full spectrum, and have not felt sick after taking 2 capsules per day -  it is a Canadian company. I buy both from Amazon. I wish you well in your searching, I know how discouraging it all is. Florence.

      highly unlikely  NOTHING and I mean NOTHING else has ever caused me these kinds of symptoms I have no problem with dates, they are a large part of my diet In fact, I eat a very high fiber, very high vegetable and bean diet and have for many years now. It's considered a whole foods plant based or plant forward diet (I do now eat some lean ground turkey but not much) I was off dairy for years but recently had to add back plain yogurt to meet calcium needs that I am not allowed to get from supplements (I have not had any problem with the yogurt)   I eat almost no processed foods. I don't eat out. almost everything I eat, I cook myself I am going to keep a food diary but to be honest, I already know that it's wheat products and also barley that are the problem, which is why I gradually stopped eating and buying them. When I was eating them, like back in early 2024, when I was in the middle of moving and ate out (always had bread or toast or rolls or a sub or pizza) I felt terrible but at that time was so busy and exhausted that I never stopped to think it was the food. Once I was in my new place, I continued to have bread from time to time and had such horrible joint pain that I was preparing for 2 total knee replacements as well as one hip! The surgery could not go forward as I was (and still am) actively losing calcium from my bones. That problem has yet to be properly diagnosed and treated   anyway over time I realized that I felt better when I stopped eating bread. Back at least 3 yrs ago I noticed that regular pasta made me sick so I switched to brown rice pasta and even though it costs a lot more, I really like it.   so gradually I just stopped buying and eating foods with gluten. I stopped getting raisin bran when I was constipated because it made me bloated and it didn't help the constipation any more (used to be a sure bet that it would in the past)   I made cookies and brownies using beans and rolled oats and dates and tahini and I LOVE them and have zero issues eating those I eat 1 or more cans of beans per day easily can eat a pound of broccoli - no problem! Brussels sprouts the same thing.   so yeh it's bread and related foods that are clearly the problem  there is zero doubt in my mind

      Thank you for your post, @nanny marley It is interesting what you say about 'It's OK not to sleep'. Worrying about sleeping only makes it much harder to sleep.  One of my relatives is an insomniac and I am sure that is part of the problem.  Whereas I once had a neighbour who, if she couldn't sleep, would simply get up again, make a cup of tea, read, do a sudoku or some other small task, and then go back to bed when she felt sleepy again.  I can't think it did her any harm - she lived  well into her nineties. Last week I decided to try a Floradix Magnesium supplement which seems to be helping me to sleep better.  It is a liquid magnesium supplement, so easy to take.  It is gluten free (unlike the Floradix iron supplement).  Might be worth a try.

      Thank’s for addressing the issue of mushrooms.  I was under the impression that only wild mushrooms were gluten-free.  Have been avoiding cultivated mushrooms for years. Also, the issue of smoked food was informative.  In France last year, where there is hardly any prepared take-out food that is gluten-free, I tried smoked chicken.  Major mistake!
