Angel Food Cake - Gluten Free Pantry

I made this yesterday. Thinned out some premade frosting with some milk to make a glaze. It was SOOOOO good. Texture and taste were both spot-on.

It was actually the first and only cake my daughter has ever actually eaten. She doesn't like cake, even before being gluten-free she never ate it. She just eats the frosting. I gave her a piece thinking that she'd eat some of the glaze, but she ate the whole piece.

Thanks for the tip! On the cover of this month's Sunset magazine is an Angel food cake, frosted with whipped cream and topped with crushed candy cane pieces. It looks so pretty, and it would be so easy to make with the mix you're suggesting. Drool... :P

Ooo...!!! I'm hosting Christmas Eve for my family this year. That would be perfect as one of the desserts!

I absolutely love that mix, my husband who is not gluten-free loves it too. I like it with strawberry preserves poured all over it! I didn't even think about topping it with whipped cream!

I really miss angel food cake and have bought this mix, but haven't made it yet. Angel food cakes can be tricky sometime, so I was wondering if there are any tricks to this. The box says to use an aluminum tube pan and I don't have one, so that's what is delaying me. I had planned on using a loaf pan. Any suggestions?

I think you need the tube pan to keep it from flopping in the middle. A loaf pan might be small enough to avoid this, but you might need 2 pans. Also once you take it out of the oven they suggest that you cool it upside down (another reason to use the tube pan) so it doesn't flop. It'll all taste the same, but you might end up with dense angel food cake

Oats naturally contain a protein called avenin, which is similar to the gluten proteins found in wheat, barley, and rye. While avenin is generally considered safe for most people with celiac disease, some individuals, around 5-10% of celiacs, may also have sensitivity to avenin, leading to symptoms similar to gluten exposure. You may fall into this category, and eliminating them is the best way to figure this out. Some people substitute gluten-free quinoa flakes for oats if they want a hot cereal substitute. If you are interested in summaries of scientific publications on the topic of oats and celiac disease, we have an entire category dedicated to it which is here: https://www.celiac.com/celiac-disease/oats-and-celiac-disease-are-they-gluten-free/
