Does anyone have a good Tuna noodle casserole recipe? I have the gluten-free egg noodles, but not sure about how to make it.

I usually buy Mrs. Leepers alfredo dinners and simply use tuna instead of chicken...

It's simple if you know how to make a white sauce! You can use corn starch or rice flour.

3-4 tablespoons of butter or margarin

2-2 1/2 tablespoons of flour or corn starch

pinch of salt and pinch of pepper

2 cups of milk

Melt butter in a sauce pan on med-low heat, once melted stir in flour, salt and pepper.

Simmer lightly until the mixture is a light golden color (about 1 to 1 1/2 minutes) stiring constantly,

SLOWLY add milk stirring constantly. Bring to a bowl continuing to stir, boil for about an minute.

I use:

about 2-3 cups of pasta, cooked, (3 if they are egg noodles)

two cans of tuna (in water) drained,

1 cup of frozen veggies

combine in a casserole dish, then pour in white sauce mix gently.

bake at 375 for 10mins or until bubbling.

makes 4-6 servings

I hope this helps you, my boyfriend mother is a huge fan!

To me, onion and celery are great to have in tuna noodle casserole, and green peas, carrots, broccoli, corn, etc are good too IMHO. It's really just personal preference though.

I can no longer use my old recipe due to food allergies. I used to use a cream of mushroom soup or a white sauce, sometimes adding cheese. But now we can't have dairy or soy and the white sauce I've come up with using rice milk or Vance's Dari Replacer have been too thin and sweet tasting.

So what I do is cook the noodles until just under done. I then toss some mushrooms, an onion and a couple of ribs of celery into my food processor, chopping until fine. I then saute these until soft in a skillet with a bit of olive oil. I add the cooked veggies to the noodles, seasoning with salt, pepper and some dried parsley flakes. I then add the tuna and a couple of handfuls of frozen peas. I then bake till heated through, adding some wavy potato chips in the last few minutes. If there is to be leftovers, I do not add the potato chips while baking. Leftover chips on a casserole get soggy. I simply add a few to eat serving after plating up.

Yeah, that one is always hard, especially since life seems to revolve around food. That happened to me 2 weeks ago with hibachi and with Hungarian hot dogs. I used to be more picky, but now I would love to try all the things if I could. On the bright side, my husband is absolutely wonderful with it, and his mom often brings a few certified gluten-free things to family get-togethers just for me (and tries to make sure main dishes are safe too). Having the people closest to you be supportive can make a huge difference.

I hear you. My extended family is very good about factoring in my celiac disease safety needs when making family celebration meal plans but sometimes it breaks down in the spur of the moment decisions to "Oh, let's go out and get some teriyaki" or the like. Especially when my brother in law comes into town 'cause he's pretty particular about what he likes to eat. So, sometimes I just say, "You guys go ahead without me. I'll find some leftovers." But, still, I admit to feeling a little left out at such times and a little like a 5th wheel.

Same, and I appreciate your comments. I just needed to get it off my chest. Sometimes, even when its a genuine mistake, it can feel all too hurtful and I didn't want to go back to work tomorrow still in my feelings.

Yes, probably slipped his mind. Grace is in order here is my thought.

I should have added that, while I dont have access during the meetings, I do as soon as I leave them (same for him) so I would have seen before I even left work. He has my number since we've needed to coordinate by cell a few times for work and other stuff. I usually have a protein bar or two in my desk for emergencies so I could have grabbed one of those and gone to meet them at the right restaurant.  Someone else decided on the change of restaurant and it must have slipped his mind that I wasn't coming back to my desk.
