Hi, my name is David, i have just become a member of Celiac.com.

I am a member of the Irish Coeliac Society, I was diagnosed in November 2005 after suffering

months of the usual unsavoury symptoms.

I had lost a lot of weight rapidly and of course thought the unthinkable the Big 'C'

It's funny that after quiting smoking after 40+ yrs i developed celiac disease.

After checking the internet i found that smoking prevents the onset of adult Coeliac Disease,

I resigned myself to a life (or lack of it) without gluten, i could not stand the shop bought

gluten free bread, which to me resembled re-constituted saw-dust.

The pizza bases tasted like old cardboard boxes (on second thoughts cardboard tastes better)

I have a sweet tooth (who hasn't) and even though i could not cook or bake i read every cook book,

in the library, looked at recipes on the internet. I was determined to make everyday goodies

Gluten Free and as close to the 'Real Thing' as possible. I believe i have succeeded to some

extent as i post adapted recipes and a few originals on the Irish Coeliac Web Site.

      Welcome to the forum, @yellowstone! The most common ones seem to be dairy (casein), oats, eggs, soy and corn. "Formed" meat products (because of the "meat glue" used to hold their shape) is a problem for some. But it can be almost anything on an individual basis as your sensitivity to rice proves, since rice is uncommonly a "cross reactor" for celiacs. Some celiacs seem to not do well with any cereal grains.

      What foods can trigger a response in people with gluten sensitivity? I've read that there are foods that, although they don't contain gluten, can cause problems for people with gluten sensitivity because they contain proteins similar to gluten that trigger a response in the body. I've seen that other cereals are included: corn, rice... also chicken, casein. I would like to know what other foods can cause this reaction, and if you have more information on the subject, I would like to know about it. Right now, I react very badly to rice and corn. Thank you.

      Shingles is dormant and related to chicken pox when one has had in the past.Shingles comes out when stress is heightened.I had my 3rd Shingles in 2023.
