Wanting Recipe/advice On Garlic/sesame/onion Bread

Anybody have any suggestions? As my base recipe, I make Lorka's Flax bread, which is wonderful! But I want to do something with an onion roll flavor to it, or like an "everything" bagel with onion, garlic, poppy seeds, etc. But it'll be a loaf of bread. I'm just no quite sure how to go about it.

I don't want to just sprinkle the stuff on top, because I want the flavor all through the loaf. Not sure how I can do that without ending up with soggy onion and garlic in the middle, which would be yucky. Saute or roast the onion and garlic first, maybe?

Any suggestions are welcome!

Following one poster on that thread, I once plopped the dough out on a cookie sheet with an icecream scoop, making rolls. They weren't the prettiest shape but it worked. That would give you more surface area for the sprinkle ons. Hmmm..at what point in the process do they put those dried garlic and onion flakes on a bagel, do they go in a water bath then bake? thus rehydrating the flakes then getting them brown in the oven? Curious minds want to know.

Maybe you could use Kinnickinnick pizza shells. Cover the surface with olive oil then add the seeds, spices, etc. that you want. I've started using them for more and more things. My daughter isn't a pizza fan so much, but loves garlic bread, so I made garlic cheese sticks with these shells over the weekend. They were so good!!!! I'd imagine you could capture the flavor of an everything bagel, but it wouldn't have that pleasant bagel shape to it.

      Oats naturally contain a protein called avenin, which is similar to the gluten proteins found in wheat, barley, and rye.
