It's coming up on Christmas time and I, along with the rest of the family, have a hankering for cookies, especially sugar cookies.

Unfortunately, we've had to cut out dairy, soy, and coconut/palm oils out of our diets as well. Anyone have some advice for substitutes? Applesauce? Oils? Just smelling them? :P

I just made these today and they worked well. I used a real egg and sugar - I hope my parenthetical directions make sense. I also stirred in some sliced almonds and sifted powdered sugar on top.

Molasses Cookies

2 C Brown Rice Flour (or gluten-free flour mix)

1/2 tsp xanthan gum

1/2 tsp ginger

3/4 tsp cinnamon

1/2 tsp salt

1 Tbs Ener-G Egg Replacer (or 1 egg and 1 tsp. baking soda)

1/4 C oil (Canola, Safflower or Grapeseed)

2/3 C Molasses

1/3 C Honey (or 1/3 C Sugar if using a real egg)

Sift dry ingredients 3 times. Add oil and sweeteners and mix well. Keep stirring until the dough is the right texture - it might take longer than you think, but it will work. Drop by spoonfuls onto ungreased cookie sheet. Bake at 375 for 10 minutes. Makes 3 dozen.

Someone on here not too long ago posted this amazing Peanut Butter Chocolate Chip recipe....it is wonderful and so easy

1 cup brown sugar

1 egg

1 cup Peanut Butter

1 tsp Baking Soda

6 ounces of Chocolate Chips

Preheat Oven to 350. Mix the first 4 ingredients in a bowl. Last fold in Chocolate Chips. Drop on cookie sheet (greased) Bake for 10 minutes or until golden on sides. These bake big too, so you may want to drop small balls onto the cookie sheet.

Everyone in my office loves them and they are very easy to make.

Has anyone gotten that peanut butter recipe to work with natural peanut butter (without hydrogenated -- soy -- oil)? My cookies have come out full of air, but I used regular sugar.

I only buy natural peanut butter and they always turn out well. I just made them yesterday for a church Christmas party and put Hershey's kisses on top to make peanut blossoms. (All but 2 on the tray were eaten and there were only 3 of us who needed to eat the gluten-free cookies.)

We made those peanutbutter cookies with cashewbutter and they were so good! They disappeared very, very quickly, and all of the people we shared them with loved them. :D

We made those peanutbutter cookies with cashewbutter and they were so good! They disappeared very, very quickly, and all of the people we shared them with loved them. :D

Yeah, if you make them with cashew or almond butter they turn into plain cookies you can add whatever you want to, like cherries and coconut or chocolate chips.

      Oats naturally contain a protein called avenin, which is similar to the gluten proteins found in wheat, barley, and rye.
