This will be our third year making Open Original Shared Link. It tastes just like the gluten version. So yummy.

My recipe is similar to Cruelshoes'.

Russian Tea Cakes (Adapted from Betty Crocker's Cookbook)

1 C Butter or margarine, softened (but not melted)

1/2 C Powdered sugar

1 tsp. Vanilla

2 C + 2 Tbs. gluten-free flour (I use brown rice, potato starch and tapioca starch)

1 Tbs. xanthan gum (only use 1 tsp. if there's already xanthan gum in the flour mix)

1/4 tsp. salt ONLY if using unsalted butter

3/4 C chopped nuts

Powdered sugar

Heat oven to 400. Mix butter, 1/2 C powdered sugar and vanilla. Sift flour, xanthan gum, egg replacer and salt (if using) together 3 times. Stir flour mixture and nuts into butter mixture until dough holds together. Shape into 1" balls and place about 1 inch apart on ungreased cookie sheet. Bake until set, but not brown, 10-12 minutes. Cool slightly, roll in powdered sugar. DO THIS VERY CAREFULLY! Cool completely and then roll again in powdered sugar. Makes about 4 dozen.

      Shingles is dormant and related to chicken pox when one has had in the past.Shingles comes out when stress is heightened.I had my 3rd Shingles in 2023.

      Oats naturally contain a protein called avenin, which is similar to the gluten proteins found in wheat, barley, and rye. While avenin is generally considered safe for most people with celiac disease, some individuals, around 5-10% of celiacs, may also have sensitivity to avenin, leading to symptoms similar to gluten exposure. You may fall into this category, and eliminating them is the best way to figure this out. Some people substitute gluten-free quinoa flakes for oats if they want a hot cereal substitute.
