Hi,

I just wanted to share a really tasty oatmeal cookie recipe. My mom has been making these for years and my husband used to love them, but since we found out he has celiac sprue he hasn't had any. The grocery store in our town finally got in Bob's Red Mill gluten free rolled oats, so I thought I would give them a try and it has now been 3 days and Jeff has eatten them each day and is fine with them.

Heres the recipe (it makes a lot 9 to 10 dozen, and they freeze great)

1 pound real butter

2 cups brown sugar

2 cups white sugar

1/4 cup molasses

4 eggs

2 tsp. baking soda

2 tsp. salt

4 cups gluten free flour (I used better batter flour)

4 cups of Bob's Red Mill gluten free rolled oats

Cream butter and add both sugars and molasses cream well. Add eggs beat for 1 minute then mix in remaining mixture (flour mixture)

Bake at 350 on greased cookie sheet. Do Not over bake, take out when cookies look doughy.

What is Bette Batter Flour?

Better batter flour is gluten free flour that I purchase on www.betterbatter.org it is a gluten free flour that is made up of rice flour, brown rice flour, tapioca starch, potato starch, potato flour and xantham gum.

I'm sure you can use any gluten free flour thats just the kind I have at home.

      The Lindt (Lindor) dairy-free oat milk truffles are definitely gluten-free, and (last time I checked) so are the white chocolate truffles and the mint chocolate truffles.

      I've used magnesium taurinate and magnesium taurate vitamins.  Didn't notice much of a difference when I used them.

      Yarrow Pom works really well with the skin issues I found out.I had to stop so my doterra because dealing with medical celiac circus. I had shingles in Feb 2023. Prayers for healing

      More great tips, and a good excuse to shop at M&S and also buy more iced buns!   I wish we had an ASDA near us, as the few times we've been to one their gluten-free pasta range seemed very reasonably priced compared to other shops.  Thanks so much, @Russ H.
