I know...i know....Hallowen hasnt even got here and i am thinking Christmas Cake

however ......i am looking for a recipe for light not dark Christmas cake.....i havent

been able to find one.....if anyone has a recipe for one that they like please please

post it....thats one thing i miss....

I don't have an actual recipe. I used a recipe that is in one of my gluten-free cookbooks for a birthday cake. It contained a chopped apple and a chopped pear. It was a spice cake. I merely added a ton of candied fruit and nuts. Not so much cake. Added enough stuff so there was just enough cake to stick it together. It was just okay. I wouldn't make it again.

Hi,

Here's a recipe for a light fruit cake I posted on the Irish Coeliac Board,

I haven't tried it myself, but it comes from a little cookbook by Sr. Anna.

I've tried other recipes from the book that turned out fantastic.

      Shingles is dormant and related to chicken pox when one has had in the past.Shingles comes out when stress is heightened.I had my 3rd Shingles in 2023.
