Baking With Rice Flours

I'm curious and working on a research project...

If you could bake with 100% rice flour and not have to use a baking mix - and have a very moist cake, would you be interested? No potato starch, no cornstarch....you do have to use Xanthan, though.

I've always wondered if grinding up minute rice would make a better rice flour. Has anyone tried it?

I haven't published it yet because I'm waiting to see if there's a market for it. People seem to be pretty ingrained now on using mixes and alternative flours. This is a method - not a product - that no one seems to know about, except maybe some commercial processors. I've searched EVERYWHERE and no one seems to know about it. That's why I'm polling the boards to see if people would be interested. In my mind, it's important especially for people with limited budgets. The only downside to the method is that it takes a little longer than a regular cake.

But, seriously, you can make a very moist cake that will stay moist for days with just 100% rice flour and Xanthan - no mixes or alternative flours.

How many of you guys would be interested?

Count me in; ditto on the no dairy though. I usually substitute anyway so I'd like to see it regardless though.

      good luck! vital wheat gluten made me violently ill. I will touch the stuff ever again.

      I wouldn't consider this lucky. I can NOT tolerate the symptoms. And I googled it and I was not even getting 10 grams of gluten per day and I was extremely ill. They'd have to put me in the hospital. I'm not kidding.   I will have my first appt with a GI dr on March 4th   I will not eat gluten again - at least not on purpose   they are going to have to come up with a test that doesn't require it.

      What Thiamine Hydrochloride brand do you take? Is it like the other vitamins I have added? What brand Tryptophan and amount do you take. Thanks

      I would not think store bought yogurt would contain gluten unless it possibly could be through an added flavoring or coloring ingredient. Otherwise, it should be naturally gluten free.  Keep in mind that some companies are capitalizing on people's fears and ignorance (nothing personal intended) by labeling foods "gluten free" that are just that way by the nature of what they are. They are hoping to create a marketing edge over their competitors by adding "gluten free" because they know it may catch attention of those new to the celiac/gluten sensitivity experience without having to cost them anything in the way of changing their manufacturing process or doing testing.

      I believe the GFCO does use a common logo for certified gluten free products (those containing not more that 10ppm of gluten) but nothing universal yet from the FDA for standard gluten free products (those containing not more that 20ppm).
