Well, the PF Changs is VERY impressive. I took some pictures I'm going to post in the morning.

Sure enough, it came on a round plate (which I took a picture of LOL). I'm going to post the pictures on my facebook page so y'all can see how much fun we had!

I GOT SOME NEW PILLOWS! Yay for me! Calvin Klein, even! LOL, I've been wanting some good, nice pillows but won't spend money on them.

I got the chocolate dessert and it was YUMMY! I thought it was going to be like cake, but it was like fudge YUM!

Our waitress was totally on spot with the gluten-free thing. I told her "I post at celiac.com and they recommended this restaurant." She said, "oh, what a compliment!!!" She made sure she brought me my own gluten-free soy sauce. I had chicken....can't remember what it was called - but man, it was delicious and she asked me if I wanted brown rice, she did such a great job, they even had Red Bridge beer so I had one of those AND a Petrone (sp?) margerita that my sister bought me. I'm STUFFED.

I just thought of this, but she actually brought me out the bottle of the Red Bridge and showed it to me before she poured it in the glass.

It was a lovely day and lovely supper and everyone enjoyed their food. As we were leaving, my momma asked me to find out our waitresses name, so I went and asked her, she got a scared look on her face. I said, "no, when my mom asks that, it means she's going to send a note of appreciation to your management."

So, I'm stuffed and sleepy and have NEW PILLOWS to sleep on! And I didn't hurt myself or break anything! :D

      Hi @Atl222 As @trents points out, there could be many reasons for this biopsy result.  I am interested to know, is your gastroenterologist concerned?  Also, are your blood tests showing steady improvement over the years? I remember when I had my last biopsy, several years after diagnosis, mine came back with with raised lymphocytes but no villous damage, too! In my own case, my consultant wasn't remotely concerned - in fact, he said I might still get this result even if all I ever did was eat nothing but rice and water.   My coeliac blood tests were still steadily improving, albeit slowly, which was reassuring.

      Welcome to the celiac.com community, @Atl222! Yes, your increased lymphocytes could be in response to oats or it could possibly be cross contamination from gluten that is getting into your diet from some unexpected source but not enough to damage the villi. And I'm certain that increased lymphocytes can be caused by other things besides celiac disease or gluten/oats exposure. See attachment. But you might try eliminating oats to start with and possibly dairy for a few months and then seek another endoscopy/biopsy to see if there was a reduction in lymphocyte counts.

      This is a solid, well-reasoned approach. You’re right that “koji” by itself doesn’t indicate gluten status, and the risk really does come down to which grain is used to culture it. The fact that you directly contacted Eden Foods and received a clear statement that their koji is made from rice only, with no wheat or barley, is meaningful due diligence—especially since Eden has a long-standing reputation for transparency. While the lack of gluten labeling can understandably give pause, manufacturer confirmation like this is often what people rely on for traditionally fermented products. As always, trusting your body after trying it is reasonable, but based on the information you gathered, your conclusion makes sense.
