Gluten Free...and Stressed Out

I realize this is along the lines of the summer rant post the other day, but here goes.

I miss so much that at the end of a very stressful week with my daughter (when does school start again?") I can't just inform my husband that we are going out to dinner because I was too stressed out to cook. Now I have to convince him to watch a crabby child while I make a non convenient gluten free dinner.

I think a lot of us can sympathize with that. I cope by keeping a couple of things on hand that I can throw together real quick. I'll give you 2 of my favs and hopefully others will add to it.

Dinty Moore Beef Stew I add a handful of a green veggie, either peas or green beans when I heat it up and a gluten-free roll or bread and butter. Dinner done.

I keep a package of Kinnickinnick pizza shells in the freezer, a package of Hormel Pepperoni, pizza sauce and some cheese on hand at all times. The pizza shells come 4 to a package for about 9 bucks and are a good size for a personal pan pizza. If the rest of the family isn't gluten free you could fix one or two of those for the nongluten eaters and let the rest of the family 'order in'.

I know it's not the same as going to grab something but at least it isn't hours at the stove.

That is a big one for me! If you are the only gluten-free one, hub could take kids out to eat.

I also, try to have something that takes almost no effort. Sandwiches, grill them if you want. My hub is happy to have a pb&j. Keep some canned chili or leftover chili in the freezer. Defrost in micro and put over corn chips and cheese. Nachos! Scrambled eggs and frozen gluten-free waffles. Breakfast for dinner. Dessert dinner - ice cream and fruit with a little chocolate sauce or chocolate chips. Make a bunch of pancakes and freeze then drag them out and drag yourself to the microwave to defrost them. Canned soup (progresso has gluten-free ones) and already cut up carrot sticks or apples. Jarred pasta sauce and pasta or left over rice with leftover meat and top with mozzarella. Melt in oven. Cook bacon and put some in freezer. These are not good for everyday, but once a week or so it's ok.

A little more effort than dragging yourself to the microwave but this is pretty fast and easy...Hillshire Farms Kielbasa, Ore-Ida Tater Tots and a veggie you can nuke.

I add a couple of medium peeled and finely diced red potatoes, a package of Birds Eye Steamfresh mixed veggies (I nuke them first) and a lb. of breakfast sausage (browned, crumbled and drained well). Finely minced ham could be used instead of the sausage or skip the meat altogether. I buy the Bear Creek soup mix at Wal-Mart and it's handy to keep on hand. To make it directly from the package and do nothing more, you only add 8 cups of water and cook for approx. 15 min. I usually end up browning the sausage while the soup is cooking and add it at the last min. Unfortunately I haven't had it for ages since I'm avoiding dairy.

for the 1st time this week- i made Mrs. Leepers gluten-free Beef stroganoff... YUM.. i also added peas & broccoli & sour cream :P

I don't know how I forgot this one since when classes were taking up so much time this summer I fixed it 2 or 3 times a week for dinner. The Jimmy Dean Breakfast Skillets. They are in the freezer section in bags. They have peppers, potatoes, onions and either sausage or bacon. You fry those up and add a scrambled egg to the pan when the taters are done. Very quick and definately not 'health food' but tasty. One bag lasts me for 5 or 6 meals so not real pricey either.

Baked sweet potato (microwave) with black beans (can), salsa (jar), and cheese.

Corn tortillas with frozen spinach and cheese. (could add beans and salsa).

I miss ice cream cones. I miss eating at my friends houses without cross examining them about the menu or bringing my own food.

I do like the fact that I'm starting to like random foods that I've really really disliked, like bananas and tomatoes. I like that I'm eating massive amounts of produce without having to think about it, because I can eat it and it's exciting in a weird way. Yea! I can eat grapes!

(I think that will slow down once it's cooler and I'm more willing to cook grains, but hey, good for now.)

mmmmm those jimmy dean skillets sound good :P add some grilled tomatoes & mushrooms- and it could be like a early morning English Fry :P

I've didn't even know about the Jimmy Dean Breakfast Skillets...I love having these emergency-type meals on hand, as well as having breakfast for dinner. Just added it to my shopping list. smile.gif After going gluten free, I spend very little time in the freezer section except to pick up a bag of frozen veggies now and then (mostly I've been buying fresh fruits and veggies).

I miss eating out at interesting hole-in-the wall ethnic restaurants. I'm so glad a lot of restaurants have started to become celiac aware. Happiness was finding an Ethiopian place that does pure teff injera bread twice a week if you call in advance.

I also miss my homemade whole wheat sourdough bread. I haven't yet found a gluten-free recipe that's close.

      Thank’s for addressing the issue of mushrooms.  I was under the impression that only wild mushrooms were gluten-free.  Have been avoiding cultivated mushrooms for years. Also, the issue of smoked food was informative.  In France last year, where there is hardly any prepared take-out food that is gluten-free, I tried smoked chicken.  Major mistake!

      my IGG is 815 IGA 203  but tTG-Iga is   <0.4!!!!!!!!!!!!!   oh my god- 13 days of agony and the test is negative?  I don't even know what to do next. There zero doubt in my mind that I have an issue with wheat and probably more so with gluten as symptoms are dramatically worse the more gluten a product has   I am going to write up the history of my issues for the past few years and start a food/symptom diary to bring with me to the GI doctor in March.   I googled like crazy to try to find out what other things might cause these symptoms and the only thing that truly fits besides celiac is NCGS   but I guess there are some other things I maybe should be tested for ...? like SIBO?   I will continue to eliminate any foods that cause me distress (as I have been doing for the past couple of years) and try to keep a record. Can anyone recommend an app or some form or something that would simplify this? I have a very full and busy life and taking the time to write out each symptom name in full would be tedious and time consuming- some sort of page with columns to check off would be ideal. I am not at all tech savvy so that's not something I can make myself ... I'm hoping there's some thing out there that I can just download and print out   do I give up on testing for celiac with such a low number? I am 70 yrs old I have been almost completely off gluten for the most part for about 2 yrs. I had a meal of vital wheat gluten vegan roast,  rolls and stuffing made from home baked bread and an apple pie- and had the worst pain and gas and bloating and odd rumblings in my gut etc - almost went to the ER it was so bad. I was thinking, since I'm spilling a lot of calcium in my urine, that perhaps this was a kidney stone (never had one before but there's always that first time, right?)    Saw my endo on Jan 20th and after hearing the story about the symptoms from eating that holiday meal, she suggested doing a gluten challenge. She said 2 weeks was fine- she said stopping it in the middle if symptoms got bad was fine- In the meantime I'd read that 2 weeks was not enough- called and argued with the nurse about this, but ultimately decided to stop the gluten on the 13th day and get the test done because I was in too much pain and almost suicidal and knew I could not continue.   so.............. that's where I am now I have had no bread since Sunday. I did have some rolled oats today and had some gas and bloating afterwards I did have some wheat germ in a smoothie on Tuesday and had a stomach ache later that night.   but overall I feel so much better! all the joint pain is gone! the nausea is gone. The stomach pain and gas and bloating are going away. Still a bit gassy but no more of that horrible odor. wow, that would clear a room if I was out in public!  I see a GI nurse March 4th  I hope she'll be able to help sort this out! can you think of what my next steps might be?

      What you’re describing is actually very common, and unfortunately the timing of the biopsy likely explains the confusion. Yes, it is absolutely possible for the small intestine to heal enough in three months on a strict gluten-free diet to produce a normal or near-normal biopsy, especially when damage was mild to begin with. In contrast, celiac antibodies can stay elevated for many months or even years after gluten removal, so persistently high antibody levels alongside the celiac genes and clear nutrient deficiencies strongly point to celiac disease, even if you don’t feel symptoms. Many people with celiac are asymptomatic but still develop iron and vitamin deficiencies and silent intestinal damage. The lack of immediate symptoms makes it harder emotionally, but it doesn’t mean gluten isn’t harming you. Most specialists would consider this a case of celiac disease with a false-negative biopsy due to early healing rather than “something else,” and staying consistently gluten-free is what protects you long-term—even when your body doesn’t protest right away.

      Yes, I meant if you had celiac disease but went gluten-free before screening, your results would end up false-negative. As @trents mentioned, this can also happen when a total IGA test isn't done.
