Addy, I am doing keto which is different from paleo in that I am allowed dairy.  I truly would also draw the line at dairy.  But we are allowed less carbs than on paleo.  I shouldn't say "allowed" because I bristle at that word when it comes to "diets".  I hate that word, too, and instead call this a new lifestyle plan.  :D

Really? Cuz I call it food hell.  :lol:

I cannot imagine how you are allowed less carbs than on a Paleo diet because this is pretty low carb, but you should be very careful. For what it is worth, I read this

when I was deciding what I should do.

 

0-50 grams/day – Ketosis and Accelerated Fat Burning

Acceptable for a day or two of Intermittent Fasting towards aggressive weight loss efforts, provided adequate protein, fat and supplements are consumed otherwise. May be ideal for many diabetics. i have been down (i mean, in the bed, sweating for 4 days, went thru all my t-shirts and then half of the hubs) have not eaten a thing.  i got stupid for a minute on nye (because it was also my son's girfriend's b-day and her own mama couldn't make it to her celebration - something about the flu..... (yeah, i'm a soft hearted idiot) and went out for a few hours - MISTAKE - and i paid for it:( )  anyways, ate a little something last night, my kid left to go back to school, called 20 minutes later and had gotten robbed.  they stole her purse out of her car ("mama i thought i locked it!  the cats were in there why would i not lock it")  i made her come back here - ugh - what kind of nasty people are there in this world.  quite obviously, she is not well off.  it's a crappy little car that she has - thanks for taking what little else she had - happy new year, humanity.  i better never see that backpack on anybody else.  ever.  :angry:

 

anyways, we had a small army come to visit over the holidays. it was really nice to see everyone, but nobody could get a pet sitter??!  i don't have any animals so 7 dogs (the 2 cats were polite) just too overwhelming.   i am so very glad they are over.  my kids must think it is hilarious to torture their mother. husband goes back to work tomorrow and hopefully life will resume some sort of normalcy.  

 

dinner tonight is:  shrimp tempura w/pina colada dippin' sauce

stir fry veggies

rice

One zucchini, one mandoline, or a veggie peeler or a very cool grater like the one I got from ama zon

I recently saw a grater thing on TV, it must be new because I have never seen it.  But it looks kind of like a pencil sharpener but you stick a zucchini/squash in it and twist, and you make noodle cuts.  One end is wide noodles, one end is thin noodles.  I can't easily find it with an internet search, although I am a bit tired and don't want to dig. 

 

Edit:  Oh yeah, today I made pizza with Chebe crust mix.  Mushrooms and olives on mine.  Ham and pineapple on the hubbys.

Sorry about your daughter, and yes, there are some real asshats in the world. I was robbed twice years ago. My mom's house

and once on vacation! It's a violation and you feel awful for a while, then you forget about it. I am glad they did not take her cats

or harm her in any way. 

 

Dinner tonight is looking like Pork roast, sweet potatoes (oh boy, some yummy carbs!) and roasted asparagus.

notme, I am sorry you had a less than stellar Christmas!  All that commotion...yikes.  And a vehicle stolen!  My brother's van was stolen Christmas Eve as he and his wife and four little ones left it running while they went caroling (it was -30C).  Her purse was stolen along with all the kids' car seats, etc.  My brother actually got into a friend's vehicle who happened to be there and CHASED the thief through fields and ditches in deep snow and once caught up.  My brother went to open the driver's door and tried to yank the guy out but he took off, injuring my brother's hand.  Anyway, the van has not been found.  My brother always looks on the bright side, though, and says he has quite the story to tell!  I left out many details but it was interesting, alright.

 

IH, sweet potatoes!  Yummm.....

 

Last night we had a Greek roast leg of lamb, slow roasted until it fell off the bone.  Cauliflower gratin and broccoli mushroom salad.  Tonight will be a repeat performance.

thank you, my sweet dears.  love2, i'm sorry i am sounding disjointed in my ramblings.  they didn't steal her vehicle, but things from inside.  the flu might have been my blessing in disguise, as i have quit smoking and i helped quite a bit not to have the will to live, much less the urge to smoke, lolz.  it had been planned as a new years res and i guess i had unforseen help reinforcing that decision in the more crucial beginning.  i am on day 6, it gets easier or so they say.   i am afraid i will end up very healthy and miserable and be so very healthy that i live miserably for a really long time.  haha. 

 

tonite, i am dining alone (ALONE?!  WHAT IS THAT?!)  so, i will have whatever's in the fridge.

 

hey, here's something we noticed:  we used coconut oil to fry our tempura shrimp last night - usually when we fry stuff what is coated or breaded, it soaks up an incredible amount of frying oil (canola/olive oil, etc)  we are constantly adding oil.  the coconut oil - not so much.  we strained it back into the jar and were amazed at how much we had left.  is this a thing?  ;)

Until my reminder on my phone went off yesterday afternoon at 2, I had totally forgotten that I had an appointment this afternoon for my eyes that my neuro was making me do. A dilated eye exam, fun times! Dinner is going to be a bit later than I anticipated because I need to be able to take off these really sexy disposable dark glasses to be able to see in the kitchen. B) Good news though, he says I have no damage to my nerves yet. I'm so happy, just another reason to celebrate! :D

 

As soon as I can see without these glasses and being blinded by light I'm off to the kitchen to make my chicken piccata and risotto. Naturally, there will be gelato for dessert, because why wouldn't there be!

I thought I'd share a little food porn. It's been a while since any of us did and I'm super proud of myself because my dinner was AMAZING! I was getting scared because the rice was tasting okay, but not awesome as I was checking it for doneness but once it was all together I almost died of pleasure. I've never made anything so good in my life. Irish, you are forever my hero.

Arlene...bummer about the theft - we've lost two vehicles and had three break ins -- we live in a very nice neighborhood, but our cars are in the drive as hubs shop took over our garage when we moved in 23 years ago!  I HATE thieves   :(

 

I do however LOVE coconut oil...I use it daily for everything :)

 

Today was an even better day...made it to dinner at the dinning table and then out to a movie "Nebraska" with my men -- first time out for this sorry sack in nearly 5 months.  

 

Night, Night -- oh I had Grilled Pork Chops, ZuNoodles and BBQ Pears tonight -- hubs gets credit as he does for nearly all dinners of late.

I thought I'd share a little food porn. It's been a while since any of us did and I'm super proud of myself because my dinner was AMAZING! I told you didn't I--that you would have to be very, very patient  (not easy for someone with the excited patience of a toddler, I know. I used to be one of those, too.. But in cooking risotto, you have to s-l-o-w d-o-w-n) :lol:

That is a slow cooking dish, but worth it in the end. So, did the hubs like it too?

 

There are many variations of Risotto. I have made seafood, mushroom, squash, etc. Play with it

and enjoy! Mangia!

Dinner tonight will be bison burgers and roasted medley of brussel sprouts, beets, sweet potato, sweet onions, squash, garlic and rutabaga.

I LOVE fall veggies, don't you guys? YUM!!!  (the only thing better would be some risotto on the side, but I remain steadfast in my  pledge to be paleo for a while)

That's so exciting that you got out! :D Hopefully it is just the beginning of a great new year of being well.

 

Apparently my husband doesn't like risotto or chicken piccata. Whatever, more for me! I can have risotto cakes for breakfast. (That's a breakfast food right?) And I can make those stuffed ball thingers for later. It makes my mouth water just thinking about them. We're having sweet & sour pork for dinner, and I'm not sure it'll go together exactly, but whatever. It goes together now!

 

I decided that this year I was going to do something to improve myself. I don't have money to throw around, but with that new fancy set of knives I decided to use every online resource available to actually learn for real how to use them and how to chop things not like a moron. I ended up with nearly uniformly chopped onion last night! :)

 

Oh, also btw, I'm glad your kiddo is ok. Her stuff is replaceable, however heartbreaking it is to be robbed. Enjoy your peace and quiet. It doesn't seem to last long at your place. :P

Your husband sounds like me---as a  child.

I hated everything except oatmeal with brown sugar, frosted flakes and milk, peanut butter sammies, grahams with buddah (that's butter in

Bahston)and oreos, maybe some  "pisgetti with buddah!

.(gluten much? lol) that was my "repertoire"

 

My dinner plate would sit there--everything cold--my lips pursed together in full battle mode. I am NOT eating that, I would say firmly..

(yet oddly, I would eat delicacies my Armenian Grammy would make that had my mother stunned)

By the time I was 20 or so, I would eat anything.

Drink anything.

Cook anything.

Something changed...and a whole world of goodness opened up for me. 

 

He seriously needs to expand his nutritional intake. He does not eat veggies or anything

with flavor, it would appear.

 

Perhaps the poor guy is taste-bud challenged?

He is texture challenged. Also, after he was diagnosed with diabetes when he was a kid he was coddled by his mother. If he didn't want to eat something, his mother would immediately give him whatever he wanted. It drives me up a wall so much that I could just slap her thinking about it. Thankfully, if I put him in front of fresh carrots, he'll eat them mindlessly and he takes a multivitamin. (Which I know isn't a substitute but what the heck else can I do?) I try to be very careful about what I'm feeding him a lot of the time. But sometimes I just say screw it and cook things I know he won't like and he can worry about himself.

It's sweet & sour pork night. We only used a little of the sauce and it needs to get used up so alas... we must have this meal forced on us again. The absolute horror! :lol:

 

It'll be a nice treat and a good way to end the day. We had horrible news today after a vet visit. As if we don't have enough problems to deal with already with my health issues and my husband's health issues. His stupid cat is freaking diabetic. <_< So know we're in a whole new world of managing diet and insulin and all this stupid crap for a CAT! I told my husband in no uncertain terms that when we buy him more food that he clearly needs to be gluten free if he is having these health problems and that I won't take no for an answer. So, on top of all the other expense, we need to find a good, quality, high protein, low carb, gluten free cat food that is cheap. OMG... I just almost fell out of my chair laughing from typing that.

My husband's turn and he is making his world famous spicy meaty nachos with a few cheeses. Not many nacho chips (high carbs) but lots 'n lots of meat! Oopsie bread, though I do not exactly love it. But I season them like crazy to make them more palatable.

We had to find our dog gluten free, vegetarian and hypoallergenic food which is $103 per bag. Not cheap as each bag lasts about six weeks. But he is just too darned cute and precious!

Oh... also, he can't have dry food any more. And even if he could there is pretty much a snowball's chance in hell we'd pay that much for pet food. It should be way cheaper though, and if needed I can always just cook for him. It's just meat meat meat, he's a cat not a dog so it's way easier. :)

I was about to suggest that over super super expensive food, haha.  You can make a ton at once and freeze it in feeding portions.

Indeed... but it is shelf stable and can withstand all temps  (which explains why both of us can store it without it spoiling :D )

I think we represent the two climate extremes at this given moment. LOL

The people next door --also our current landlords--give us fresh greens from their garden. It's very sweet of them...  and we appreciate it very much.

 

News on the house is...should be done by the end of the month. Fingers crossed, "God willin' and the crick don't rise" (ARLENE will understand that southern tawk) Literally. There is an awful lot of water around these parts....

This cracked me up and my husband asked what I was laughing at. So I repeated this to him exactly as it is says. (Hey, us PA rednecks tawk like that too!) He's like the what? Crick? He was just all :blink:..... LOL! Hope it gets done on schedule!

 

It didn't have the decency to snow for my birthday, but it's snowing today. The day that I'm working in the evening at the college half an hour away, which I only do like twice a year. <_< Dinner is leftovers, because I won't be home to cook. I made lots last night just to plan for this. I can just throw a bag of rice in a pot and BOOM! dinner. :)

When I worked at a retail pharmacy, we had two families, one with a dog, one with a cat, who would come through the drive thru with their pets who had diabetes and get their insulin and syringes.  One day I spoke to the lady with the cat in depth about it, and I asked her how she is able to stab her cat many times a day.  She said her cat just seems to know it is going to make him feel better and lets her do it.  I thought then that she must be a miracle worker because my cat would murder my face. Haha. 

 

Last night was steak, mashed potatoes, and sweet corn on the cob.  Got some Omaha steaks for Christmas from a friend and they are pretty good :)  Tonight I tried a new brand of frozen pizza and liked it so much I made its own thread on here praising it.  My gallbladder is going to hurt from eating extra of it, but I don't care- so worth it.  Going to get it taken out soon anyways, maybe the end of this month if it all works out.
