First gluten-free Christmas and I feel like it was a great success. My adult daughtrs and I talked about our problems with gluten and what we each cannot tolerate, nice to have family wiuth the same issues in this sense eventhough I wish it weren't the case.

Our dinner was lamb roast with homemade mint sauce, scalloped potatoes, artichoke salad, cornbread stuffing and green beans. For dessert I made a homemade banana cream pie, and oh my goodness how wonderful it was at first bite. I think I am getting the hang of this gluten-free cooking!

Sounds great! Merry Christmas!

This is my second one gluten-free and much better food wise this year. I made a spicy thia rice noodle salad and marinated cheese to take to my family last night. Of course they had a ton of gluten filled snacks all around, but loved my stuff too. Today I made ham, potato salad with dill, greenbean casserole and quiche. It was just me and my kids, but felt wonderful.

I know the holidays are not really all about food, but I feel better this year that I have more of a handle on cooking gluten-free and soy free.

I made lamb roast too! with sea salt, rosemary, thyme, marjoram, basil, and oregano. I also made mashed potatoes (with rice milk and olive oil) and roast carrots and parsnips in the lamb drippings. And gluten-free christmas pudding but DAMN it's sweet....! and can't add cream to it to cut the sweet since no dairy :(

but still, wonderful first gluten-free Christmas for me too!

Merry Christmas!

I went to my niece's, she's an RN and I took a risk but ate her dinner instead of the gluten-free frozen dinner I brought. She served standing rib roast, smoked ham, fresh green beens with shallots, and grilled sweet potatoe wedges with fresh rosemary and S&P. I didn't eat any of the appetizers even though they appeared gluten-free. (Sister's MIL made them, couldn't trust the source.)

Neice also made incredible mashed potatos with cream, butter, chopped shallots and grated smoked edam cheese.

I made meringue cookies with 1/2 dipped in chocolate and chopped roasted macadamia nuts. They were great, found the recipe in a Christmas gift, a Co/okbook by Cooking Light gluten-free. I recommend that cookbook BTW.

This is my 2nd Christmas gluten-free also.....Much better this year! I look at it this way....at least I don't have to exercise extra because I've eaten too much junk. It has been nice not being sick this year....I'm finally getting the hang of it. Stick with what you know it gluten-free and don't try anything that others claim is gluten-free and you should be ok.

For me, this was the twelfth gluten-free Christmas.

I have two younger brothers, and the three of us take turns hosting the family Christmas gathering and dinner. There are eight of us--three wives, and our parents. None of us have children.

It will be our turn again next year. We serve a totally gluten-free meal, and have never had a negative comment.

Alan was the host this year, and there were some items with gluten, but he and his wife are very aware of contamination issues. I trust them, and have never had a bad experience eating there. Kim has allergies, so that may be a factor in their understanding.

I hope everyone had a great Christmas.

This was my first Christmas totally gluten-free and post-DX and was able to don my chef's cap again for the first time since taking seriously ill in 2007.

It was miraculous to be able to eat and drink whatever I wanted once again.

To be able to enjoy food again without pain!!

I actually have tears in my eyes as I write this.

Cocktails, shrimp, Filet mignon roast with port mushroom sauce, whipped potatoes, asparagus, cheesecake, muffins, mince pie...I made them all, adapting my favorite recipes to gluten-free. It was the most food I have eaten in YEARS. It was pure joy!

I am full, content, happy and beyond grateful for a husband who stood by me when things went so awry and we made quite merry. I may not be "there" yet, but I am on the way. Life is good!

I hope all of you continue to get well and enjoy a Happy and HEALTHY New Year.

Just finished a wonderful gluten free Christmas dinner all cooked by my mother - bless her heart - she does a fantastic job! No cc either! Family loved the meal & nobody missed the gluten! I am beyond lucky to have such support - from family and from all of you on this forum.

This was our second gluten-free christmas dinner. Last year I made everything myself and spent the entire day in the kitchen (NOT something I enjoy in the least). This year I bought a meal pre-prepared from a local vegan and gluten-free restaurant. It was AWESOME! The whole family was impressed and I am absolutely stuffed to the gills! I will certainly be doing this again next year. :D

I'd love to get the thai noodle salad recipe from you, I am a big fan of thai! Sounds like a wonderful Christmas!

      Im so frustrated and still getting the run around trying to reprove my celiac disease which my past primary ignored for 25 years.I understand that theres a ray of medical that doctors are limited too but not listening and telling the patient ( me) that im not as sensitive as I think and NOT celiac!Correction Mr white coat its not what I think but for cause and affect and past test that are not sticking in my medical records.I get sick violently with foods consumed, not eating the foods will show Im fabulous. After many blood draws and going through doctors I have the HLA- DQ2 positive which I read in a study that Iran conducted that the severity in celiac is in that gene.Im glutenfree and dealing with related issues which core issue of celiac isn't addressed. My skin, right eye, left leg diagestive issues affected. I have high blood pressure because im in pain.Im waisting my time on trying to reprove that Im celiac which is not a disease I want, but unfortunately have.It  has taken over my life personally and professionally. How do I stop getting medically gaslight and get the help needed to bounce back if I ever do bounce back to normal? I thought I was in good care with " celiac specialist " but in her eyes Im good.Im NOT.Sibo positive, IBS, Chronic Fatigue just to name a few and its all related to what I like to call a ghost disease ( celiac) since doctors don't seem to take it seriously.

      @Martha Mitchell, your reaction to the lens implant with gluten sounds like it could be an allergic reaction rather than a celiac reaction. It is possible for a celiac to be also allergic to gluten as it is a protein component in wheat, barley and rye.

      Scott I also have different symptoms than most people. It affects me bad. Stomach ache, headache, nauseous, heart racing, whole body shaking, can't walk then my throat starts to close. It attacks my nervous system. The only thing that saves me is a 1/2 of Xanax...it calms down my nervous system

      Scott Adams. I was dealing with a DR that didn't care about me being celiac. I repeatedly told him that I was celiac and is everything gluten-free. He put an acrylic lens from j&j. I called the company to ask about gluten and was told yes that the acrylic they use has gluten....then they back tracked immediately and stopped talking to me. The Dr didn't care that I was having issues. It took me 6 months and a lot of sickness to get it removed.... which can only happen within 6 months. The Dr that took it out said that it was fused and that's why I lost vision. If they would have removed it right away everything would be fine. He put in a silicone one that was gluten-free and I've had no issues at all in the other eye. Do not do acrylic!
