My son's bday party is tomorrow. I got the gluten-free cake under control, got gluten-free snacks. I forgot I need to decorate this cake lol

Does anyone have a good and quick icing recipe that is suitable for tinting and piping? Oh, and is food coloring gluten-free?

If you don't have time you could always use Betty Crocker frosting. If it is gluten free it will be on the label. I don't worry about food coloring. Have a great birthday party!!

My boys and their friends thought M&Ms on the plain icing (whaterever color) was the best looking cake they had seen! Cake and candy! Just sprinkle the M&Ms on while the icing is its softest.

Well....just make some royal icing like you would normally pipe with. i always used the powdered kind but I know you can make it.

I use a takeoff of the Wilton's Buttercream frosting. My recipe is something like this:

1 cup solid vegetable shortening (Crisco)

1 teaspoon vanilla extract

1 teaspoon butter extract (or sub in an additional teaspoon of vanilla extract)

6 cups confectioners' sugar

pinch of salt

enough milk to get to the consistency you want (can use water if you need to avoid milk)

I measure everything half-a$$ed . . . it's very forgiving . . . oops, added too much liquid? then add more powdered sugar.

In reality, I probably use twice as much extract as what I have listed. If you want the very white icing, then you need to use the clear extracts. If you want intense/deep colors, you should use paste type coloring.

Wilton makes the clear vanilla and clear butter extracts/flavorings. Their paste colors and extracts/flavorings are gluten free and can be purchased at places like Wal-Mart, Micheal's, and JoAnn's. All three locations have "Wilton" sections.

I got it done. By the time I Google all the ingredients and got it made, it took 6.5 hrs but looks great!! I hope it tastes ok. I hope this picture link works

Thanks! I'm really proud of how it looks. I hope it tastes ok. This will be my first ever gluten-free baking. I did almost booboo though. Apparently walmart brand cooking spray has flour in it. Good thing I checked! I had heard cooking sprays are fine, but apparently just Pam original

Wow! Great Job. My now 17 year old son was Buzz's biggest fan for almost 5 years - wore his Buzz costume every day it wasn't in the wash for a good six months after his third Halloween.

Don't be offended when they just eat the icing and leave a lot of cake . . . that has nothing to do with gluten/gluten-free cake and everything to do with kids love icing :lol:

That does look great! I agree about the icing too lol, I think this year was the first year that kids were eating the cake and not just the icing, they were all 7 to 10 years of age so a little older than kids in previous years.

Not only did they eat it...I got compliments!! The adults said it was awesome and the kids loved that the cake was purple and green. It was heavy but moist. Almost like a pound cake heavy. I'm assuming that is from using rice flour instead of wheat.

      hi, i want to say thank you to you and @trents   . after 2 phone calls to my GI, her office called me back to tell me that a blood test was “unnecessary” and that we should “follow the gold standard” and since my biopsy did not indicate celiac, to follow the no dairy and sucraid diet. i luckily have expendable income and made an appt for the labcorp blood test that day. i just got my results back and it indicates celiac disease i think 😭   im honestly happy bc now i KNOW and i can go gluten free. and i am SO MAD at this doctor for dismissing me for a simple blood test that wouldn’t have cost her anything !!!!!!!!!!! im sorry, im so emotional right now, i have been sick my whole life and never knew why, i feel so much better already   my results from labcorp:   Celiac Ab tTG TIgA w/Rflx Test Current Result and Flag Previous Result and Date Units Reference Interval t-Transglutaminase (tTG) IgA 01 28 High U/mL 0-3 Negative 0 - 3 Weak Positive 4 - 10 Positive >10 Tissue Transglutaminase (tTG) has been identified as the endomysial antigen. Studies have demonstrated that endomysial IgA antibodies have over 99% specificity for gluten sensitive enteropathy. Immunoglobulin A, Qn, Serum 01 245 mg/dL 87-352

      Okay that is really good to know. So with that being positive and the other being high it makes sense she diagnosed her even without the endoscopy. So glad we caught it early. She had so many symptoms though that to me it was clear something was wrong.   yeah I think we had better test us and the other kids as well.

      @GlorietaKaro, your respiratory reactions to gluten make me wonder if there might also be an allergic (anaphylaxis) component at work here.
