No big deal, but I just had my first cookie in over a year and a half. Almost all the cookies in my healthfood store contains soy so I haven't been able to eat them, but today I found Pamela's "Simplebites Extreme Chocolate Mini Cookies". I don't know if I can eat chocolate yet. I did OK with some (can't remember the brand) back at the beginning, but since then I had a "gluten free" chocolate bar that I got at a craft fair and didn't do so well. That was almost a year ago. Thought I'd try these and see what happens.

Well, they sure taste good to me. They are mini's, so I have had four of them so far. I was going to try making some of those flourless cookies using cashew butter instead of peanut butter but they don't carry cashew butter at my local shop. Maybe next time I'm in "the big city" I can find some. In the meantime, I feel a small victory having found these Pamela's cookies.

Woohoo!!! I'm pretty excited about cookies myself these days. I finally went and picked up the Nov/Dec Living Without that has cookies on the cover. Flip back to the recipes and there is a picture that could have been taken of my grammy's ginger cookies. I started to cry. I won't be making them until the weekend but I thought I'd live the rest of my life without my grammy's cookies. Isn't amazing how wonderful cookies are for the soul? :D Merry Christmas to both of us!

You know what I'd really like? A gluten-free ice cream cookie - you know, the ones that are like ice cream cone with the frosting inside. I'm sure there is no such thing, at least not without soy. But they do have Udi's gluten-free waffles at my local store. I could probably console myself with some of those with ice cream on top. :wub:

I'm NOT going to go nuts with all of these treats, but since it's the Holidays, and everyone else is pigging out on fattening goodies, it feels good to have SOMETHING special to eat.

My favorites are the ginger snap mini's! The ones you got have soy lecithin, don't they? It's been a while since I got that flavor, they are pretty yummy. Good find...

Nope. No soy. The only "ingredient" I thought might be iffy is "gluten-free natural flavorings", but I am happy to say that I have had no reaction whatsoever. YIPPEEE!!!!!!

I love those, and the ginger snapz, too! They are tiny and crunchy, just like I prefer them. Unfortunately, cookies are a bit off limts of me at the moment... :(

      I agree there I've tryed this myself to prove I can't eat gluten or lactose and it sets me back for about a month till I have to go back to being very strict to settle again

      You may also need to supplement with B12 as this vitamin is also involved in iron assimilation and is often deficient in long-term undiagnosed celiac disease.

      @par18, no, Scott's use of the term "false negative" is intentional and appropriate. The "total IGA" test is not a test used to diagnose celiac disease per se. The IGA immune spectrum response encompasses more than just celiac disease. So, "total IGA" refers to the whole pie, not just the celiac response part of it. But if the whole pie is deficient, the spectrum of components making it up will likely be also, including the celiac disease response spectrum. In other words, IGA deficiency may produce a tTG-IGA score that is negative that might have been positive had there not been IGA deficiency. So, the tTG-IGA negative score may be "false", i.e, inaccurate, aka, not to be trusted.

      This may be the problem. Every time you eat gluten it is like giving a booster shot to your immune system, telling it to react and produce antibodies again.

      Scott, I am mostly asymptomatic. I was diagnosed based on high antibodies, low ferritin (3) and low vitamin D (10). I wasn't able to get in for the biopsy until 3 months after the blood test came back. I was supposed to keep eating gluten during this time. Well why would I continue doing something that I know to be harmful for 3 more months to just get this test? So I did quit gluten and had the biopsy. It was negative for celiacs. I continued gluten free with iron supps and my ferritin came back up to a reasonable, but not great level of around 30-35.  Could there be something else going on? Is there any reason why my antibodies would be high (>80) with a negative biopsy? could me intestines have healed that quickly (3 months)?  I'm having a hard time staying gluten free because I am asymptomatic and i'm wondering about that biopsy. I do have the celiacs gene, and all of the antibody tests have always come back high. I recently had them tested again. Still very high. I am gluten free mostly, but not totally. I will occasionally eat something with gluten, but try to keep to a minimum. It's really hard when the immediate consequences are nil.  with high antibodies, the gene, but a negative biopsy (after 3 months strict gluten-free), do i really have celiacs? please say no. lol. i think i know the answer.  Asa
