  1. I so understand!!!! I so miss the convinience!!! I was a chaperone for my son's highschool band trip. I did real good with packing a cooler of food, but the last meal we went to the mall to a food court... do you know there was not one thing there I could eat other than a salad.. and I just didn't want a salad.. I was ready to burst into tears!!! So...
  2. My favorite breakfast.. I make it on the weekend, I fry up a huge batch of hashbrowns, onions, and peppers... put them in a 9x13 pan, then I mix eggs, spinache, cheese, and some type of meat.. and poor it all over, enough of the egg stuff to cover the hasbrowns and then I bake it 350 for 30-40 min (knife inserted in the middle is clean) and then I cut it...

Herre is the recipe for Brownies that I think are GREAT!!! 1/2 C applesauce 4 oz chocolate (unsweetned) or 1 C cocoa (I use cocoa) 4Tbsp oil 4 eggs 1/2 tsp salt 2 C sugar 1tsp vanilla 1C quinoa flour I add chocolate chips and nuts... pour into 9x13 pan...
  4. I am at work right now.. but I have a GREAT recipe for brownies from scratch... so when I get home I will post it. I got it at our local gluten intolernt group meeting. I know it starts with 1 c of cocoa, 1/2 c applesauce, sugar, quinoa flour,and I don't remember what else.. but I will post this later today... so chewy and good!! MMMm
  5. OH wow!! I use to love peanutbutter filled pretzels, it is funny I never thought to dip pretzels into peanutbutter!!! YUM!
  6. For my potatoes.. I cook them in chicken broth and then when I mash them.. I drain some of the stock.. but mash them with the stock. (I also add garlic, but I see you can't use garlic) but maybe some other spices... leave them a bit chunky when mashing mmmmm
  7. Yes I have to chime in this is awesome bread!! I bake a loaf about once ever week and a half and it is sssoooo good. I make it just like it is, but I add sunflower seeds and sometimes nuts!! Thank you again Laurie!!!

B homemade quiche (I baked canadian bacon, sweet red peppers sharp cheddare and a carton of egg sub from Costco) for quick breakfasts on the run.... S a small handful of nuts and a non fat decaf latte L 2 pieces of string cheese, red peppers, jiciama, celery, cucumbers and hummus and then...
  9. OH!! And I went to IHOP for breakfast with the whold family... and hubby and I were going to split an omelet cuz they are usually huge.. but after reading what was in it... AAAAHHH they mix pancake batter with the egg so it is lighter and more fluffy!!!!!! Whats with that.. so be careful with omelets too!!!

    My situation is strange... I was on birth control for 22 years.. (minus the time to have kids) everytime they switched me to generic, and that sent me for loop, so went back to normal. So My Dr finally took me off at age 40 and all my symtoms started.. bloated, tired, depression, foggy brain, hard time staying focused, migrain headaches... it was horrible...
  12. I have a great recipe for bagels!! I am at work.. so I will send it later.. they are really good, I am going to try and use the dough to make a pizza crust tonight.. mmmmm The last batch I made I added fresh rosemary out of my garden... YUM!!
  13. My favorite chicken salad is this... Cubed cooked chicken, mayo, garlic, dill seasoning, parmesian cheese, one apple peeled and chopped, chopped walnuts or peacans, and if you want some grapes. I usually do 2-3 chicken breasts, then the rest to taste. Don't forget the dill!!! mmmmm serve on crackers or bread or veggies, or just eat it!!
  14. I am self diagnosed, and have been gluten free since Aug 1st. Well Friday night I wanted pizza so bad, and I was beginning to doubt myself, so I ate some.. and I tell ya what, I don't think I will ever do it again on purpose. I have felt horrible all weekend. But for me it was just a test, and I believe I was right with the gluten intolerant.
  15. gosh,this is still new to me... gluten free since the 1st of August, but I am so glad I can still have my peanut butter!! I have been eating it on apples, bananas by itself!! I also gave up soda for while trying to keep this simple.
  16. An old fav of mine is real simple, but I have not tried it since gluten free but plan to very soon, is this. I boil chicken breasts maybe add some rosemary.... make homemade egg noodles... once the chicken is done I shredd it and throw it back into the pan with the broth that I just made... add the noodles with a little extra of the flour to thicken...

    wow I really need to find this thread today.. I have been gluten free for 11 days and yesterday I went to see my Dr and he wouldn't listen to me wanted to put me on meds for headaches even tho he agreed with me that it is probably something I am eating and that I was on to something but lets get rid of the headaches first. I told him I didn't want medication...

  19. Karen, that does sound like fun!! I am new to this WOL I have only been gluten free for 3 days now. I will have to check into there clases, I didn't know they offered classes like these. AWESOME!! I tell ya I sure like it that the fog has lifted considerably!! I feel so much better already!!!
  20. Bully4You~ I work downtown on Commercial. This is all still new to me... today is day 3 to be gluten free... I have actually found it pretty easy so far. I love fruit and veggies, and I just threw in rice yesterday for my dinner. I am going to go check out the Harvest bread store. They make gluten free bread on Thursdays according to their web sight. ...
