I 2nd the recommendation of Tinkyada pasta. Nearly identical to gluten-containing pasta, though you may have to make it a few times to figure out how to cook it to be exactly the right texture (as it goes from al dente to mushy kinda quick). It even reheats well. You can use it to replace noodles in any recipe. Also, I discovered a really yummy new breakfast... -
I have strong feelings about this topic. I believe raw food is HORRIBLE for most people with GI problems. Hey, I have a real Jewish mother and she doesn't cook anything except spaghetti! My dad's the cook in my family ;-P I personally think stress, depression and anxiety play a role bigger than we even know when it comes to health stuff. I don't know what the rules are on this board but IMHO people should not be able to give others such dangerous medical advice here. That someone who is supposedly a medical student would do so is quite alarming. Advising a celiac to eat gluten? That is just too risky. A celiac who eats gluten is risking everything from vitamin malabsorption to dehydration...

Welcome! I was just diagnosed, but I've been gluten-free (gluten-free) for 2 months now.... Before that I ate no wheat on and off for a few years while, but was never strict about gluten. One thing that I found very helpful, was to go to amazon .com and put in "Gluten Free" in the search bar, it comes up with all kinds of grocery products that are gluten... -

I just got prescribed Rozerem but my insurance doesn't cover it... So I'm going to use up the rest of the Ambien I have and then try to get some free Rozerem samples from my doc next time I see him.

Fascinating! This also supports what someone told me in the thread about my Enterolab results, which is that I could try reintroducing soy after being casein free for a while to see if I'm still intolerant, since the study talks about damaged mucosa from casein intolerance causing soy sensitivity. Thanks so much - And they're vegetarian and kosher! Wow. I will definitely bookmark that site. They don't claim to be soy-free but two out of three ain't bad (for now). I'll contact them to see if they actually use soy ingredients in the multi. -

I am a believer in Splenda being "evil" as with all artificial sweeteners... I mean I'm not about to run a one-woman campaign to get people to stop eating it, but I know that it makes me feel ill and I don't trust it one bit. I need a multivitamin, which used to be such an easy thing to find but now that I've learned I shouldn't be eating soy or casein in addition to gluten - Yikes! Is there such a thing as a gluten-free, CF, soy-free multi? EDITED to add: While I"m at it, I also need to find a calcium citrate / magnesium supplement... Thanks for your help -

For what it's worth, I got really sick after eating some canned stuffed grape leaves last week - Have no idea what the cause was, I don't think I'm sensitive to grain-based vinegar so i doubt it was that. Maybe there's a common ingredient or spice in them that has gluten in it or it could easily have been CC in both our cases. -

I've made them several times. The keys, for me, are: -Using the amount of egg and oil they call for -Using butter instead of oil, if you're not allergic to casein - It's way yummier -Not overcooking it by even a second. Thanks Carla - Ya know, I've been looking forward to seeing these results but now that I see them I'm like "Noooooo!" I'm going to have to just take my time accepting it, and start working on kicking the casein (and myabe the soy) for a while to see what kind of results I get from that.
