  6. Most of the roux directions that I've seen only say "flour". I have made a roux with gluten-free flour. Its really no different than a substitute for wheat flour used as a thickener in gravy, etc.

  9. Just one more alternative view: One son was two years, the other two months when my mom died. All during their childhood, I was in the Army and they saw grandparents for a week about once a year or so. I don't know the exact dynamics you are dealing with but would have tolerated a lot of annoyance for my sons to have known their grandmother.
  10. With the Whole Foods, was it their store brand Gluten-Free Bakehouse? Stock might vary from store to store but the local one for me carries several varietys of this brand. I like the one that is just labeled "sandwich bread". If you like stuff like sunflower seeds, etc in your bread, try the Prarie Bread.
  11. Thanks for the alternate viewpoint Richard. My experience is similar to yours. Responses in these threads aren't just for the active participants, they are as important (if not more important) for the lurkers who are stuggling to deal with these issues.
  12. I have only been on this board and diagnosed about three months but I haven't heard on any support group in the area. There are a few people from Northern Va on the board. I live in Burke. There is a support group for parents with celiac kids down in Prince William county.

  14. When it comes to statistical tests, I'd avoid saying always or never. With that caveat, I'd be extremely surprised if there was a medical test that didn't have some false results - both negative and positive.
  15. Is there any possibility that celiac is actually increasing in frequency due to efforts to grow wheat varieties with higher protein content? Since we don't know what the trigger is, could it be that 30-50 years ago, the wheat consumed didn't have the protein content to reach a threshold to trigger celiac?   17. If you live in the Northeast US, the Wegmans store brand of organic corn flakes are gluten free. They have dried strawberries mixed which might be an issue for some people.
  18. I made gluten-free cornbread (from a mix) and used that along with cooked rice as the main ingredients. Seasonings, onion, celery, etc. could be pretty much anything you want. I looked at several recipes and then just made it up as I went - probably couldn't duplicate it. I used a gluten free pre-made chicken stock (Pacific Foods I think).
  19. Rice cookers have a sensor and turn off when the water has boiled out. They don't necessarily cook rice quicker than a pot on a stove but because they turn off they are not supposed to scorch the rice. I bought a mid-range Rival rice cooker and found it does great as long as you unplug it when it stops cooking. If you let it sit with the "keep warm"...

  24. Doesn't some of the confusion come from the fact that you can outgrow an allergy and a wheat allergy could have very similar outward symptoms to celiac?
  25. Being a little skeptical, I would wonder how something that is stuck on a dish/pan to the point that you can't scrub it out is going to come off that same dish/pan onto food that is cooked/served on it?
