I do in home daycare. My 2 year old has celiac disease and all the other kids have no food issues. Their parents bring their food and snacks. I have made a few rules! 1. My daughter gets horrible rashes on her bottom when she has been glutened. She's still in diapers so I give her a bath, let her air dry, and apply Zinc Oxide on it (A GENEROUS amount). I've had great luck with tom sawyer flour for simple roux's but I haven't needed to brown the flour for darker rouxs I think I'd try adding amaranth or teff to it and see what happens.

Its all going to depend on the Dr. My daughter had her blood drawn and about 5 day later (including the weekend) I received a phone call that she had tested positive for Celiac Disease.
