  1. I do not know about supplements so cannot comment on that. I will say that if you want to be gluten free that you cannot eat oatmeal, spelt or any of that stuff. really at this time in your healing process you should not be eating any grains. It is just really easier to stick to the basics like baked chicken, cooked carrots, baked sweet potatoes, that...
  2. If you read the book "Good Calories Bad calories" you will see why your cholesterol went up on a high carb diet - that is what most of the book is about & it also explains insulin & sugar issues - I love this book & I am not even through the whole thing yet. Please read this book, you will be amazed & learn a lot !!!!
  3. Hathor, you should read "Good Calories Bad calories" he has referenced every study (well almost) since the 1800's. there are at least 100 pages in the back of references. This book is a very technical read & not for everyone, but it will give you some good insight as to what really goes on with a lot of these studies & the NIH and other organizations...
  4. I do not take supplements, I think you heal by only eating the things that you tolerate, getting plenty of rest, & exercise. I have had a lifetime of allergies, including many many food allergies. I was wheat free for 10 years before I was gluten-free, well I would eat wheat occasionally thinking it was okay because it was just another food allergy...
  5. welcome, I am 61 & have been gluten-free for 3 1/2 years. I tested thru enterolab.com. I have two DQ1 genes, as do most of the people in my family. It takes awhile to heal, you will I am sure make adjustments to your diet as you learn more about food. I might suggest that you also go dairy & soy free at the same time. I always say this,...
  6. Congrats, I know what you mean about the energy. I am 61 & I feel about maybe an energetic 40... Really I feel better now than I felt at 40!!! I totally advocate a low carb diet, well really I think grain free is the healthiest, with plenty of frutis & veggies & meat & seafood & fat & nuts, but if I were you i would not go low...
  7. Casein is the phosphoprotein in dairy products. We usually just say protein for short, but it is the casein that is so bad for us. The lowest casein content is found in butter. Some of us tolerate butter. Which by the way i think you should only use butter, if you can have dairy, that margarine stuff is really bad for your arteries etc. Yes, for some...
  8. Just some thoughts, but is anyone cooking with wheat flour or wheat cake mixes in the house? This is enough to get in the air & keep the kids sick. Also, any candles, air freshners, fireplace smoke, cigarette smoke in the house? For the child in school, I would get the individual hand wipes & teach the child to use them often. I carry those...
  9. re calories you might want to read the book "Good Calories Bad Calories" then cook a half pound of bacon & fry a couple of eggs in the bacon fat, that ought to give you a few good calories to start the day.
  10. If I were you I would give up the lara bars (I cannot eat them) & the flax seed bars, & the peanut butter and almond butter. I would eat fresh walnuts, in place of peanuts & almond butter. A lot of people have problems with the almonds (me). I would try to add in fresh pecans also. You did not mention if you are eating white potatoes, if you...
  11. well your kids could have DQ1 or DQ3 genes. You could test thru Enterolab.com The problem with the DQ1 & DQ3 genes, which are referred to as the "gluten Intolerant" genes is that they can kill you if you are eating gluten, before you get any damage to the villi. The whole medical community is totally missing a huge section of people that have problems...
  12. Irish & English here... I think it is the Vikings that spread the genes around to the Northern Europeans. Also, all you Irish need to educate yourself about Hemochromatosis. Which is what they call the Celtic Curse. But I think the celtic curse also includes the celiac genes, I think you will agree when you read all the illnesses that go with the...
  13. Yes, I do not eat grains, I mostly eat Paleo diet. Occasionally I will have cornbread with cornmeal & corn flour, that I make myself with coconut milk in place of milk. I keep posting that I do, but I have not had any now since Thanksgiving... I seem to not want the grains now, I am happy eating my regular diet. I even recently mostly gave up rice...
  14. Ruthla, just do yourself a favor & give that canister to someone that could use it. Do not make yourself sick emptying it & then I would not reuse the container anyway... just my take on it. I would save up for a new container... I am happy that you are making this effort to keep your children healthy.
  15. Just a guess here, but if you have only one DQ2 your other gene could be DQ1, which is gluten intolernace gene, which is really just worse than plain celiac which mainly just affects the gut. With the DQ1 gene it always seems to go along with the neurological problems, ADD, ADHD, Migraines, depression, temper tantrums in children. Also, the people that...
  16. Kara's mom, I made this for my grandkids when they were gluten-free (long story, my son's fault they are not now gluten-free) Take a white corn tortilla & butter one side put a slice of cheese on the other side, top with another corn tortilla, toast both sides in a skillet, just takes a bit, put precooked pizza toppings on top of the tortilla, bake...
  17. I used to have that UTI problem constantly & my daughter had the same thing, each month if we were not sick, we soon would be. I think it is really because the monthly period drags your immune system down. Ours even had the same onset time, though different days, three oclock in the afternoon, whammo... how long have you been gluten-free? are you...
  18. I totally agree with the above two posts. My son age 37, now has liver damage, "idiopathic" according to the doctors. My son refuses to go on the gluten-free diet. I know that he has had this since he was born. I would buy his rice crackers at the health food store, all the while my doctor telling me that was not necessary, wheat never gave a child...
  19. give up all dairy, I think that will solve your problem also get a physical & be sure to get your prostrate checked dairy is nototrious for causing those little accidents...
  20. Sorry, I did not mean for it to be a berating, just an informative eye opener. & you might ask more specifically the advice you need for dealing day to day. Is that day to day while trying to get to the office? meals? do you have other children? a husband? do you travel a lot? going on vacation? have you read the gluten free lists of foods? would...
  21. Just because your children tested negative via blood test does not mean that they do not have a gluten problem. You can have total villi damage & still have a negative blood test. I suggest the gene test thru Enterolab.com because they test for the celiac genes & the gluten intolerant genes. IMO the gluten intolerant genes are the worst, especially...
  22. you need to go gluten free today with your child for the sake of your unborn child, & yourself. A negative blood test means nothing. there is no such thing as a SOFT celiac diagnosis, the child very plainly has a gluten problem. When you get your child all healthy, do not try to kill him in a few months by feeding him gluten, which is an utterly ridiculous...
  23. I second comment about giving up dairy...
  24. erica... what part of the country are you in? We can see if there is a support or ROCK (raising our celiac kids) group near you. Of course I think that the easiet best thing is to take the whole house gluten-free. Those that want can eat gluten outside of the house. I think you will be amazed at how much healthier all the family becomes. Just feed...
