I know how you feel. I found out in college and on a tight budget. People will tell you up and down that it's cheap to eat gluten free but that's bologna. I still had a low level illness nearly constantly until I finally got a whole new set of utensils and pans and things. So for me at least, using a completely different and seperate set of tools was a necessity... -

In Ethiopia everything is made from their native grain, teff, so you can have everything at meals made of local food. The food, for that matter, is quite good, too! And so long as the meat is well cooked and you're consuming the traditionals (sans pork) you really don't have to worry much about disease either. At least not so much as elsewhere in Africa. -
While you're on the topic... I'm going to be heading back to Glenview (near Northbrook and Northfield) in a few months to live there for a while. Are there any support groups out there?

I've really been wondering this too. I'll read a label that contains questionable ingredients but doesn't have the Contains: Wheat label near the bottom. I know that Barley and Oats and Rye don't have to be labelled so that's another cause for concern. But if the ingredient is wheat-specific and the container doesn't warn of wheat does that make it safe?...

I don't have a ton of experience with the condition. My experience is in changing locals and diets often. If you switched to the Paleo diet and started to have D right away, there's a high probability that it's due to an increased consumption of fruit/nuts/veg. Switching from a high-carb diet to a mostly-protein diet will due that to a lot of people. If you... -

Thank you all so much for taking the time to respond. It means a lot to me. I've been avoiding the inevitable I think - sometime this week I'll go out and get new dishes and new pans that are all recognizably mine, and then I'll wash them all myself as well and be sure nothing is set atop them. It seems that a food journal is impossible to avoid as well....

I went out to sushi last night and got some rolls that contained a couple kinds of meat (none fried at my request) some avacado and cucumber and carrots with seseme sauce, wasabe and ginger (no soy sauce). I also regularly get shrimp fajitas there with corn tortillas and I've had no problem. I don't trust the sweet corn cake, which is sad, and it sounds as though there is a possibility for cross contamination, but as I've said I've never been glutened there.

What you describe with the numbers is exactly what was happening to me. Occasionally a number would drop out but not usually. I only bring it up because I've asked a number of local Celiacs and some mentioned that they get the same problems occasionally. I'm certainly not maligning dyslexic people. As I mentioned a few of them are my relatives.

I have read that gluten intolerance, unlike allergies and celiac, is different in the sense that it's a nervous system reaction as opposed to triggering the immune system, and that it doesn't do lasting damage. I believe that there is a Chevy's Fresh Mex restaurant near Orange County (I saw two driving from Redlands to there and back recently). I love Chevy's. I order the fajitas with corn tortillas and I have never had a problem. Besides which, the fajitas are pretty darn good, at least at the one I go to. Happy holidays! I hope you find somewhere nice.
