  1. Thanks guys for all the ideas. It amazes me what I've forgotten! You've refreshed my memory of what's possible. Today I made a sauce of chopped onions sauteed in olive oil. Added in tuna, mixed frozen veg.(peas, carrots, corn etc.) salt and pepper and parsley and tossed w/ the pasta.
  2. I would look carefully at the steroids and how long you will be on them and side effects. I have a parent who has nearly gone blind in one eye and has the same macular degeneration in the other. He's been on steriods long term for COPD. If his doc had been more careful and intervened sooner he would have been better off but still had problems, however for...
  3. When I made gluteny stuffing I would dry the bread but with the EnerG I don't. I just cube it fresh and pour over just enough broth to moisten without making it soupy or mushy. I bake mine in a casserole not the bird but it would be the same for the bird, maybe minus a bit more broth because the birds gives up it's own. I don't remember which EnerG but I...
  4. I have a serious latex allergy. I remember a slight transient rash with dishwashing gloves YEARS ago and now I have to schedule my grocery shopping appointments because I react to balloons, among many other limitations and inconveniences. It is more likely that you already have a latex allergy that has crossed over to bananas. That's how it was with me...
  5. Here are some recipe threads from the forum
  6. I thought Birkett Mills was a good source for buckwheat. No? Have you seen the other grains, sorghum etc. as whole grains and not flours?
  7. In addition to what's already been said about the differnce between gluten-free and wheat-free, there are a few products that contain oats but they are not certified gluten-free oats and so those products are not gluten-free. They are just wheat-free because the oats are cross-contaminated with wheat. The products with oats that are labeled gluten-free...
  8. This is what we do, whether or not it is the best way to handle it is another matter My son's(13yrs) friends tend to pull these things together at the last minute and some parents are not good at communicating. I try to keep some extra frozen pizzas, cupcakes or such and boxes of cereal on hand, although I've been known to make a last minute dash to...
  9. If you shop on a weekday during normal business hours you can stand there in the store and call the 800 numbers on the packages from your cell phone. I and I'm sure many others here have done that. Many mfrs.(not all) are prepared to answer the ? "is this gluten-free?" I carry a note pad and pen and write down brand names and phone numbers or websites...
  10. Can anyone recommend types of whole grains and sources to obtain them. I am looking for a few new ones to rotate in my diet and would appreciate your help to see if I've overlooked any. I am already consuming quinoa, brown rice, soon to start wild rice. I know of a source for buckwheat, gluten-free oats of course. Our local asian market sells millet but...
  11. Your oldest sounds a bit like a combo of my son and I. You should definitely get him tested. He sounds very unwell. I'm sorry to say. That weight is very concerning and I know, I am very petite 5'1" and have had low weight problems due to health issues. I joke that I am the size of a 13 yr old but it's no joke, I'm the smaller side of 13. I had all kinds...
  12. This company is the one one of the other posters was talking about I think. Their products can be found in the refrigerated section of many grocery stores with the hot dogs etc. Open Original Shared Link
  13. That gives me some ideas that I can start from. Thanks. Good to "see" some old familiar "faces" too. I've ditched my low-carb ways(due to major allergy problems/load) so I am back "in town" but I haven't had so many foods in so long I've forgotten so many things and feel like I'm starting from scratch again!
  14. I am looking for some ways to dress up plain pasta, however I need ideas that do not include: dairy soy egg tomatoes bell peppers and a few others that I'll not mention just yet so that it doesn't stifle anyone's inspiration LOL I have put it in chicken soup but that's all I've been able to come up with so far.
  15. I encourage you to visit the forum for those who follow the diabetes management program of Dr. Richard Bernstein. It matches well with the direction you have already gone Open Original Shared Link There are a number of members who have celiac disease or are gluten-free. The additional food intolerances/allergies may/may not start up after going gluten...
  16. Danielle, I lost weight immediately after going gluten-free. That left me back at my prior weight before I had gotten sick. However after 2 yrs gluten-free, I suddenly lost alot more weight. That left me dangerously thin and even though being gluten-free gave me back so much energy, I was still more fatigued than I wanted to be. I knew those 2 things...
  17. Here are a couple to get you started. Use the words, flax, almond meal, coconut flour, low-carb or grain-free in your searches. You'll find pizza crust recipes too and cakes and cookies etc. Open Original Shared Link Open Original Shared Link Open Original Shared Link
  18. You could do what I do for my corn allergic son. Follow any one of the recipes for a flour blend but use only the starches that you can have. We sub tapioca for corn but you could so the opposite and use corn or potato for tapioca so that you are using a combo of corn and potato for your starches.
  19. Here's a link that explains the different reactions. Open Original Shared Link
  20. Something to consider seriously with a reaction to bananas is latex allergy. Bananas are a strong cross-reactor with latex. Does she get "band-aid" marks from band-aids(non-latex-free ones)? An allergist can do a skin test. Latex allergy is also associated with asthma. It would be inportant to find out because with latex allergy there are many things that...
  21. Everyone in the Celiac world hates EnerG breads but I find they make great stuffing/dressing. The texture holds up well and doesn't fall apart like some gluten-free breads do when they bake in that liquid.
  22. Here's that jello brain mold. Open Original Shared Link
  23. Yeah, I had forgotten that one, but I did see it when I was looking around and thought it was cool looking!
  24. Sorry I have to disagree with Peter. My husband is Japanese and I have made homemade miso. We have researched this in both English and Japanese. The only way to know if the miso is safe is to contact the mfr. and ask about the starter culture. Starter culture for miso is sometimes/often grown on barly and then removed from it so the barley is technically...
  25. I am going to sound like such a newbie in asking this but with food allergies and diabetes, I have avoided many foods for a long time and am now reintroducing and re-inventing the wheel. What can a person do with a tortilla? breakfast ideas with one? Spead it with something, do the quesadilla thing,...what else? I don't do eggs, tomatoes, cow dairy...
