Sorry about the egg alergy. Funny thing, I often have that same problem when I bake gluten-free bread. But I've never had muffins rise and then fall. I'm guessing it's the ratio of insides to outsides or something like that. Have you considered making chocolate muffins? I used to be the bread man. I'm thinking of being the muffin man instead... -
FF, I really feel for you guys. I have enough problems without all the extra ones you have. The only thing I can compare it too is when I make my homemade salsa/hot sause. I try to wash my hands well after cutting up the serranos, jalapinos, papitas, and habaneros. But those oils aren't water soluble and tend to stay on your hands. I always forget...

Did they rise and fall or never rise? Why use egg substitute? Eggs are a natural leavening agent and are high in protein. Your obviously not dairy intolerant. It's not a gluten containing ingredient, so there should be no particular reason Celiacs should avoid it. You can't compare consumer use with factory workers. Someone correct me if I'm mistaken, but it's not "chemically modified" per se, in the sense of adding chemicals to it to change it. It's "modified" by an application of heat and/or pressure.
