ARCHIVED I Found The Best Flour Blend!
larry mac replied to LoriG's topic in Gluten-Free Foods, Products, Shopping & Medications
According to their website, the ingredients are "a blended flour of rice and tapioca flours, xanthan gum, and unflavored gelatin". Probably white rice flour, tapioca starch, xanthan gum, and unflavored gelatin. Pretty simple, basic flour blend. Unflavored gelatin is sold at any grocery store, made by Knox, four little envelopes per box, about $1.50.... -
ARCHIVED Marie Callender's Frozen Dinners
larry mac replied to buffettbride's topic in Gluten-Free Foods, Products, Shopping & Medications
I looked today and the chicken, cheese and rice was the only one that didn't list wheat in the ingredients. Sorry. best regards, lm -
ARCHIVED Trouble W/lay's Plain Chips?
larry mac replied to horsefarmer4's topic in Coping with Celiac Disease
I don't eat the plain Lay's simply because I like the Ruffles better. Ruffles have ridges . I also eat plain Fritos, Tostitos (for making nachos and dipping queso), and Cheetos. Haven't ever had a problem. There's no MSG or preservatives in the Ruffles, Fritos, or Tostitos. Even if there was (which there is in the Cheeto Puffs), it doesn't bother... -

ARCHIVED Is Anything Safe At Mcdonalds?
larry mac replied to dandelionmom's topic in Parents, Friends and Loved Ones of Celiacs
Hey mg, This is exactly the ingredient that's keeping me from buying some items at our ultra gourmet food store/health food store Central Market. From some of their fresh made soups to their various versions of tamales, there is this abomination. I wish they'd make up their mind which one it is. Surely, it's not all three. Sounds like a catch-all statement... -
ARCHIVED Gluten Free Soy Sauce?
larry mac replied to Shwem's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Would someone please let us know how Braggs Liquid Aminos on popcorn tastes? I'm dying to know. best regards, lm -
ARCHIVED Teff! Does Anybody Know If Teff Is Okay?
larry mac replied to Lisa16's topic in Gluten-Free Recipes & Cooking Tips
L16, That's a lot more info about Teff than I've seen. I'd probably agree that some of the hype about ancient grains is probably marketing BS. But, who knows? For one, we don't have a choice but to try our best to find alternatives to wheat flour, undeniably the best product the world has ever seen for baked goods. Secondly, the big money grubbing... -
ARCHIVED Celiac Magazine! Vote! Hurry!
larry mac replied to highrentsmile's topic in Publications & Publicity
I think there should be a vote to get Martha a new computer monitor. That's one piece of junk she's using in the picture of her "taking time from her very busy day to vote". best regards, lm -
ARCHIVED Teff! Does Anybody Know If Teff Is Okay?
larry mac replied to Lisa16's topic in Gluten-Free Recipes & Cooking Tips
All of my gluten-free books discuss Teff. I would highly recommend getting some (gluten-free books). They are great reference sources. One in particular is The Best Gluten-Free Family Cookbook, by Donna Washburn & Heather Butt. It contains a very useful information table of thickener substitutions. It describes the properties of the starches Arrowroot... -
ARCHIVED White Bean Flour
larry mac replied to trcn's topic in Gluten-Free Foods, Products, Shopping & Medications
I've used sorghum for almost a year and haven't had any issues. But I have only regular Celiac, not DH. I also regularly use Tapioka starch & Garbonzo bean flour. Best regards, lm -
ARCHIVED Packaged Breads Vs. Packed Mixes
larry mac replied to elmuyloco5's topic in Gluten-Free Recipes & Cooking Tips
No matter how bad your homemade gluten-free bread may be, it will be better than the frozen store bought gluten-free bread. best regards, lm -
Don't know about Burger King, haven't eaten there since going gluten-free. I remember their taco's as being different from other fast food taco's. The meat was more like home made taco meat, ie. like ground beef seasoned with taco seasoning, as opposed to mystery meat. Not that I don't love mystery meat. I eat Jack in the Box taco's quite often, with...

ARCHIVED Any "lost"-aholics Out There?
larry mac replied to TriticusToxicum's topic in Introduce Yourself / Share Stuff
Watched the recap show tonight. Pure genius, loved the pop-ups. It's been so long we had forgotten some of it. Now I'm really excited about the season premier. best regards, lm -
ARCHIVED Quick-breads Are All Suddenly Failing
larry mac replied to RiceGuy's topic in Gluten-Free Recipes & Cooking Tips
I've been doing that also for a long time now. But I use all kinds of milk, eggs, butter, buttermilk powder, milk powder, sour cream etc., in addition to the baking powder, baking soda, and vinegar. best regards, lm -
ARCHIVED Quick-breads Are All Suddenly Failing
larry mac replied to RiceGuy's topic in Gluten-Free Recipes & Cooking Tips
Why not try a different brand? Also, are you adding any vinegar? I use baking powder, baking soda, and vinegar in my muffins and haven't had any problems. Of course, I haven't needed to buy any new baking powder lately. I use Great Value (Walmart) brand. best regards, lm -

ARCHIVED Help Me Convert This Receipe Please!
larry mac replied to Worriedtodeath's topic in Gluten-Free Recipes & Cooking Tips
Sorry Stacie. I think I may have misunderstood your first post. I thought the gluten-free crossiants were to be your first attempt at gluten-free baking. I hope you can make great stuff and let me in on some secrets. I've been pretty dissapointed in my gluten-free bread making. I love bread. My favs were crispy, crunchy on the outside and dense and doughy... -
Why would dish soap have gluten? I've never worried about non-food items, but I just have the regular Celiac, and as far as I know haven't had a problem with non-food items. Does you're son have DH? best regards, lm

ARCHIVED Trader Joe's Flourless Chocolate Walnut Cookies
larry mac replied to Mango04's topic in Gluten-Free Foods, Products, Shopping & Medications
These sound just like some very delicious cookies they make at Central Market. Not sure about the walnuts though. And they aren't called flourless (nor is any gluten-free stuff made there), but the ingredients are simply sugar, egg whites, salt, and chocolate. You can easily tell just by looking at them that the egg whites are the leavening agent. They have... -
We just moved into a new building at work. The breakroom has a new microwave that has a turntable that moves from side to side instead of around in a circle. I haven't had an opprtunity to use it yet, but will next week. Anyone know about these? Seems like a good idea. In a normal turntable, the food in the middle doesn't really get moved around so as...

ARCHIVED Help Me Convert This Receipe Please!
larry mac replied to Worriedtodeath's topic in Gluten-Free Recipes & Cooking Tips
Just my 2 cents, but I wouldn't start out anywhere near this ambitious. I've made bread for decades and never attempted crossiants. Have been gluten-free baking for one year with limited success. gluten-free baking is night & day different than gluten baking. No, the dough won't feel the same. Won't look the same, won't taste the same. There's no kneading... -
ARCHIVED How Does Everyone Feel When They Cheat?
larry mac replied to a topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
I've made it over a year now without cheating once. I've briefly considered it, but not seriously. Wouldn't know where to begin. Too many things I miss. best regards, lm -
ARCHIVED Should You Thank The Catholic Church?
larry mac replied to Alexolua's topic in Publications & Publicity
I'm not entering this discussion to defend the church. For one, I don't consider myself Catholic, although I grew up one and my family is Catholic. Many times as a youngster, I rode my bike to school early to help the priest say 6:30am Mass for the Nuns in the Convent. Yes, I was an alter boy. Secondly, I don't see where anyone is being denied communion... -
ARCHIVED gluten-free/cf/sf Creamed Chipped Beef!
larry mac replied to Guhlia's topic in Gluten-Free Recipes & Cooking Tips
Angie, I can hardly believe it. Never would have thought of making this. One of my faves BC was Stouffers creamed chipped beef. The product in the frozen red box with real butter and cream. The only creamed chipped beef product I ever found that was really, really good. On toast of course. Naturally it has flour in it and I haven't had it in over a year... -
My daughter has an '06 Sonata and loves it. It's the "Accord' or "Camry" type model with more features but lower cost. We did a lot of research before we bought it new and it was a fantastic value. She has 20000 miles now and still is totally satisfied with it. It's a really nice car, with a great warranty at a great price. Hyundai has come a long way...
