ARCHIVED Cheating On Dairy A Bad Idea For Me
hathor replied to lonewolf's topic in Food Intolerance & Leaky Gut
I do sympathize. I had been casein-free since the beginning of the year (and was very casein-light for years before that). Sunday I decided to take the chance on a dish that the waitress told me had the slightest touch of milk in it. My sinuses are only now calming down and my gut went berserk for a day and a half. So I guess I'm not one of those who... -
ARCHIVED Undiagnosisable
hathor replied to adrianak's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Gene testing will only tell you if what you have is most likely celiac or, on the other hand, nonceliac gluten sensitivity. Many people have "celiac genes" without the disease. I suppose that, given your experience going off gluten, that plus the genes would be a good clue. (There ARE people with diagnosed celiac without the genes too, although not very... -
ARCHIVED Another Bloating Question

Am I correct in assuming you have eliminated the kidney beans & bananas, too? How low fat a diet do you estimate eating? I have to stay pretty low, like maybe 10-15% of total calories. I find that eating fats as they occur naturally in certain plant foods (like nuts, seeds, and avocado) don't bother me as much. But if I eat added oils or animal... -
I was in Philly over the weekend and I checked out Sazon when my conference was over. It was wonderful. I found plenty of vegetarian dishes (that is something they have created -- I was told "we don't eat vegetables in Venezuela" ). The co-owner who waited on me knew which items on the menu were gluten-free and even volunteered information about how...

I know exactly how you feel, if that helps. Soy seems to be a common third problem. So I don't think you can conclude from your experience that you will keep on adding new intolerances. Probably you have always been intolerant to soy but your other intolerances covered up your symptoms. Now that you are healing from being gluten and casein free...

I think it is normal to "grieve" for all those foods you can't have again. Your life has changed irrevocably and that is hard for anyone. But as you feel better ... and find foods you can eat ... the sadness will go away. It will probably go away sooner than you expect. Don't worry about being a whiner. At first I tried to put a brave face on and say...

ARCHIVED Top Three Worst Gf Products
hathor replied to anerissara's topic in Gluten-Free Foods, Products, Shopping & Medications
I agree with many of the views already expressed as to various inedible items. I don't want to name three, however. That would detract from the #1, Holgrain Brown Rice crackers. They taste like styrofoam. Putting a nice spread on top tastes like ... nice spread on styrofoam. When I've given up on certain gluten-free breads, I've put them outside and... -
Well, Ms. Juliebove, you have absolutely made my day Thank you, thank you, thank you.

ARCHIVED This Doctor Is Not Worth My Time
hathor replied to mrsry's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
My understanding is that the "classic" symptoms for celiac are only showed by a minority of celiacs. It is amazing that someone who should know better thinks he can look at you and tell. What's worse, he drew the blood but then didn't do the testing, which would have been the easiest thing to do. (The only justification I could see for NOT doing the tests... -
ARCHIVED Undiagnosisable
hathor replied to adrianak's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Given your response, you clearly have gluten intolerance. You feel better without eating it. Celiac is just the tip of the gluten intolerant iceberg. The doctors shouldn't be telling you that you are "fine" simply because you don't pass their tests for celiac (yet). It could be that gluten hasn't damaged your villi observably yet, but is in the process... -
ARCHIVED Another Bloating Question
hathor replied to holdthegluten's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
When you did your intolerance testing, what all was tested for? It certainly sounds like you have another intolerance. Were you tested for legumes, nightshades, corn, etc.? As Tom said, keeping a food/symptom diary can be useful. If you posted a typical day's diet where you have experienced bloating, perhaps we could guess at possible culprits. ... -

I've heard OF the Maker's diet, but I don't know what it entails, other than what I just saw from googling it. Here is something about identifying food intolerances: Open Original Shared Link It discusses the different adverse reactions folks can have to food, as well as the most common difficult foods. If all else fails (taking out individual... -
I love paella. I have several recipes I've found online. I add an assortment of variously colored veggies. Hoppin' John is good, too. You can find many different versions. ARCHIVED Sinus Issues Caused By Gluten - Help !
hathor replied to NorthernElf's topic in Coping with Celiac Disease
Oh dear. Doesn't the yeast get filtered out of the final product? When Enterolab said I was intolerant to yeast, I was told to avoid things with "yeast" listed in the ingredients. At least for wine, my research said that yeast doesn't end up in the final product and allergic reactions are rare. But is it different for beer? Do you have any other symptoms... -

I'm unclear -- are you still eating yogurt? If you are intolerant to dairy, it would include yogurt. It could be that you are consuming some gluten, casein or soy unaware or there is a CC problem. Have you talked to the food service director? You really need to KNOW what is in all you are eating, not just guess. What foods have you added or had more... -
ARCHIVED Dna Testing... What's This?
hathor replied to lilgreen's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Sounds like doctor curiosity. Your negative tests didn't mean anything because you were off gluten. It was silly for them to even test you under those circumstances. I think you already know you have to avoid gluten. You feel better without it. What genes you have doesn't make any difference. If you don't have either celiac gene, it just means (probably... -
ARCHIVED Sinus Issues Caused By Gluten - Help !
hathor replied to NorthernElf's topic in Coping with Celiac Disease
Have you tried going casein-free? Many gluten-intolerant folk seem to have problems with casein as well. Actually, I realized my dairy problems some years before my gluten difficulty. I used to have several sinus infections each year. I gave up dairy seven years ago and haven't had another one. I've heard plenty of people report here that dairy gives... -
I make a coconut rice dish too -- I add in some garlic and freshly grated ginger.

ARCHIVED I'm Confused Now
hathor replied to Kitty Cat's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
(Unless I'm confusing the two terms ), accuracy measures what percentage of those with a positive result actually have the disorder. Sensitivity is a measure of what percentage of those with a negative result do not have the disorder. My understanding is that the blood tests are highly accurate, meaning that if you have a positive result you most likely... -
ARCHIVED Protein Sources

Another fan of Living Harvest hemp milk here. Do not get the Hemp Bliss stuff, though. My daughter and I both thought it was atrocious. Other good sources for essential fatty acids are ground flax seed (as already noted) [i've found a gluten-free cereal called Nutty Flax], green leafy veggies (if you can get these into your son, you are a better mom... -
ARCHIVED Nutrition Text Book Fails To Mention Celiac Or The gluten-free Diet!
hathor replied to a topic in Publications & Publicity
Sounds like the nutrition book has more than one problem. Unfortunately, this does happen. No one is an expert in everything or can be up on all the latest thinking on all subjects, particularly if you are talking about a broad-based text for an introductory course. So errors creep in. Things get said that simply reflect what the text authors were... -

Celiac is a subset of gluten sensitivity. Here is another thread just started on the same subject. I posted there a link to a couple articles that should help you. Open Original Shared Link Also, as I'm sure people here will point out, there are false negatives with blood tests. -
Which test or tests were performed? Here are a couple articles about gluten sensitivity: https://www.celiac.com/st_prod.html?p_prodid=1417 Open Original Shared Link If you are gluten sensitive, you have to avoid gluten every bit as much as a celiac would. Think of it this way. Celiac is a subset of gluten sensitivity. The former means that...

ARCHIVED Casein Intolerant And I Ate Cottage Cheese
hathor replied to SUZ42's topic in Coping with Celiac Disease
I can tell you from experience that having a lot of casein after not having much can make you sick. I've been on a pretty much vegan diet for years, but had little bits of casein from time to time. (OK, the restaurant put parmesan cheese on my dish, I didn't send it back -- that sort of thing.) At Thanksgiving, I had a slice of cheesecake (this was before...
