Your symptoms certainly fit. I have some of them myself, with my primary concern being the constipation. I have Enterolab looking at what I was finally able to give them, so we'll see. It is misleading to look at one paragraph and complain he doesn't discuss them in that one paragraph. Sometimes it takes more than one paragraph to completely...

You can also eat legumes, nuts, seeds, and gluten-free grains. One test for intolerance is simply to eliminate the food and see how you do. It sounds like it could be celiac or non-celiac gluten sensitivity. If you eliminate gluten and you feel better, why do you need a doctor's diagnosis? The diagnosis would just lead to the doctor telling you to eliminate gluten. You can always arrange for Enterolab testing on your own if you want some confirmation. In my own mind, I'm not quite sure of the distinction between delayed onset allergies and food intolerances. Is there one or are we simply dealing with different terms for the same thing? I've seen delayed-onset, IgG-mediated reactions (I think I have the terminology correct ) called allergies. But these reactions will not show up on skin prick testing... -

What has taken up the slack in your diet? If you cut out things with gluten -- and assuming the same level of food intake -- you must be having more of something(s) else. If I were you, I would look into those items first and see if any of them can cause gas production. Has the fiber content of your diet changed, for instance? Is the gas problem constant... -

Some doctors only recognize celiac or nothing. But others recognize non-celiac gluten sensitivity. The gluten-free bread at Trader Joes isn't half bad. I'm almost as new to this as you are and haven't done any baking yet, although I've put together some links for mixes. The first gluten-free bread I tried (EnerG high fiber) tasted like sawdust to me, even toasted. Maybe I don't like tapioca. The Trader Joe's bread is based on rice flour.
