  6. I too wash mushrooms and haven't had any issues. Alton Brown tested the amount of water that mushrooms absorb when soaked and it was almost none. I guess if it's a concern you can grow your own. Nurseries sell mushroom kits.

As you know severe anemia is a serious condition and can cause potentially fatal complications if not treated so your friend should not be trying to discourage you from getting iron infusions if she doesn't know what she's talking about. They are quite safe when closely monitored by a physician.
  10. I don't know of any IV drugs that contain gluten. The gluten is usually in the starch used to hold pills together.

  12. I am aware of the existence of wheat-based coatings but really can't recall any issues with produce and I am pretty sensitive. I interpreted their response to mean that if I have concerns about the coatings that I should avoid eating the peel.
  13. I also do the lemon juice in rice or hemp milk. I usually add a little oil to get the fat content up. I like Jungle Shortening for a butter sub in baking. It's similar to Spectrum. McCormick makes imitation butter flavoring that is gfdf so you could add a little to get the butter flavor.

  15. I certainly went through my share of bad doctors but I can say I have the best doctors now. Not only do they listen and respect me but they are all celiac literate (two on a personal level). I don't think I would be where I am today without their support.
  16. Hi Npceliac, Welcome aboard! If you're using a recipe you can try adding a little xanthan gum or gelatin to the bread to help it stick to together. There are several mixes designed for bread machines so you can give those a try too.

I've been making gluten-free bread in the old fashioned way (in the oven) for several years and decided to get the Zojirushi a few months ago and have really been struggling to get the settings just right for the bread mixes. I finally decided that I needed to start from scratch.

I don't know that I have a good answer for why your son is healthy now but I can tell you that we have several members diagnosed in the 40s, 50s and 60s here who can share stories. Until the 60s-70s, it was generally accepted that children grew out of celiac disease so I'm not surprised that your son was put back on a gluten diet...
