  1. Thanks in advance for any suggestions. I buy Lundbergs organic long grain brown rice and the basmati rice. The brown rice is okay, kinda of gummy and tasteless but the basmati rice i burnt to the bottom of my poor pan. Then I tried to make a chicken and rice soup in the crock pot and the rice pretty much dissolved! does any one know what i'm doing wrong?...

  4. I am laughing right now because I went to the gastro. for the first time yesterday and the second question out of his mouth was "do you have any irish in you?"     ARCHIVED Sneezing

    About a year ago, before I was diagnosed I made the comment to my naturopathic doc. that it seemed after i ate regular cereal I would have a sneezing fit.....maybe just a coincidence since I also sneeze while reading the newspaper- something about the ink dust or something. The sneezing was never problematic though. Amy
  6. Today I have an appointment with a GI doc. for the first time. I've been gluten-free for three weeks since diagnosed by a blood test but definitely know that in the past week I've had some gluten by accident. What types of things do I need to ask the doctor today? What do I need to bring with me? Thanks guys! Amy

  11. I make a dish that used to call for Campbells Cream of Mushroom but is one of DH's favs. I found a cream of mushroom soup that I think actually tastes BETTER than the old stuff I was using!   13. In doing my research I came accross a website that suggests eating a low fiber diet for celiacs. If I don't eat enough fiber, then I get the big C. I was just wondering if any one else had heard this also and what the significance of a low fiber diet does for a celiac. Amy

I guess since I'm only mildly feeling better at this point, it's tempting to turn back to that delicious piece of coffee cake for breakfast but I know it takes time. I'm so not a patient person! It used to be the only time we got to "eat out" and that included seeing friends and eating out. Now, I feel like a prisoner in my kitchen but I so badly want to just be normal and go out!   18. bklynceliac- the yogi tea website says they can't guarantee that cross contamination doesn't occur. apparently they process other foods and teas all on the same machinary/same factory in addition to adding barley malt to some of the other flavors/herbal combinations. amy

  20. I've been suffering from night terrors for the past several years, really bad the past year and was wondering if any one had the same thing and the gluten-free diet helped them.   21. Just in my experience, I can't eat at the Whole Foods hot bar or salad bar. Everytime I've been majorally glutened it was coincidentally right after eating there. It might depend on which Whole Foods you go to also....... Amy

    Gayle & Angel: are both of you still seeing Dr. Ehrenpresis? I'm in Arlington heights and I actually visited that practice and saw another doctor there. I was so irritated at how busy they were and the fact that they lost my x-rays I never went back. Maybe a diff. doctor would be a diff. experience? I'd love to not have to travel into chicago for appts...
  23. I have to second the crock pot. I usually make at least one meal on sunday in it for lunches and then another meal mid-week. It makes those nights you work late or are just plain tired so much easier. I've been making extras the past few weeks of everything so I can just eat leftovers and am not left standing in the kitchen starving. Also, make a meal list...
  24. I love the Yogi Calming tea and it's not gluten-free I didn't drink it for a few days and felt great and then I had a cup two days ago and was sooooooo sick! So much for a "healthy" tea- they put barley malt in it! After reading the website I won't try any of the other teas either. Any suggestions? I Know about Celestial Seasonings, any other good ones...
