  2. My flour mix has some 3 cups Sorguhm 4 cups Rice Flour- I usually use 2 white and 2 brown or whatever mix you like 1 Cup Millet 2 cups Potato Starch 2 cups Tapioca Starch 1/2 cup Potato Flour ( I whiz instant potato flakes- much cheaper) 1/2 cup ground flax- Optional 1/8 to 1/4 cup xanthan gum If you use your own gluten-free flour you could...

  5. I find Potato Starch at our local asian markets along with tapioca starch (flour) and white rice flour along with sweet rice. At our local Indian Market I am able to buy sorguhm and teff flour- all much much cheaper.

I buy millet and sorguhm flour at an Indian Market- Jowar is name for sorguhm flour. I do however order on auto ship from amazon my Brown Rice Flour. I grind my own Teff Flour from the tiny seeds...
  9. I don't have a recipe but I will tell you that we have tried Bob's Red Mill 2times now and I won't be doing it again- I mean its ok but not all that great.
  10. Peanut Oil would be very strong to bake with. The applesause would be a great sub, I have seen Earth Balance for a butter sub I believe and I find that Sour Creme helps add needed fat to baked items, I know you can't do dairy but I think there is a sub for that as well. Egg beaters is just egg whites, so that won't help you. Flax swells up with water for...
  11. I make a Chocolate Sheet cake very very close to hers and its gluten-free and I have no probs subing flour in it.
  12. A silpat helps sometimes, some people put plastic wrap on top and gluten-free flour on the counter, its whatever works best for you, don't forget to flour the rolling pin too. Here is my soft sugar cookie recipe. 2 sticks of butter or oleo 2 cups of sugar 2 Eggs
  13. We usually cook a roast in a crockpot all one day with potatoes etc then on 2nd day I put it back in with Curley's BBQ sauce (I am in Kansas) it may be regional- but cook for a few more hours and you have heaven. Sweet Baby Ray is great too.
  14. I use my own Flour mix which is very close to Better Batter. I have a number of great recipes Open Original Shared Link Under both Gluten free and Cookies. You can use gluten-free flour I just would use a little less in any of the cookie recipes ie: If it calls for 2 cups regular flour I would personally use 1 3/4 gluten-free Flour, if Chocolate or Chocolate...
  15. Well it looks to be just Hubby and I so it will most likely be Filet Mignon Mashed Potatoes Bread for him Pumpkin Pie Pudding or a new crustless recipe for pumpkin pie I may try... Due to severe adhesion issue I can only eat 6 oz so was not all that thrilled with the "big meal" idea anyway.... Just Thankful..
  16. I can only tell you that I tried a couple of vertical bread makers and found I did not get a loaf I was really happy with (using Pamela's). I splurged and bought me a Zo and I love it, it makes a horizontal loaf and seems to mix it better and smoother. Good Luck.
  17. Hi, it is very easy to grind teff, it is such a small grain. I use a little coffee grinder I bought at walmart for less than 15.00 to grind flax, teff basically any of the small grains. It works really well.
  18. Thank you both, I cannot have the whole seeds (Diverticulitis is a problem for me) so I am interested in using the slurry to help in baked goods, they make it sound as if it helps in gluten-free baking.
  19. I just ran across some mentions of using Chia Seed Slurry in baking gluten-free items to help retain moisture and add some elasticity. After searching I have found few recipes for anything like this was wondering if any of you had tried it already.. ?
  20. Here is how I do my frying, I would of course leave the corn flakes out since that is another allergy. But this is how I fry Chicken Strips and I make hubby gluten-free Chicken Fried Steak a lot and he is def not gluten-free.... Open Original Shared Link
  21. Open Original Shared Link This is a link to Angel Food Ministries where you can get a box of food for about 1/2 normal price and they just started doing the allergy box and its GLUTEN FREE... There are no requirements to meet, no matter what you make you can use this service, just put in your zip and see if there is one in your area. My daughter used...
  22. I have found this mix to work pretty much cup for cup for regular flour in all baked goods EXCEPT breads- and I have just not experimented yet with it in bread. I used to own a bakery so texture and taste are very important to me. For items such as choc chip cookies or other chocolate items I drop the rest of the flour by 1/3 cup and use Teff flour instead...
  23. A little potato flour can go a long way. I use it in my basic flour mix but to save money I take Instant potato flakes and give them a quick whiz and voila- Instant potato flour.
  24. My DD cannot have tomatoes or onions etc either. We smoked Red Peppers in the oven then put plastic wrap on them for about 10 minutes then slipped the skins off and pureed them with a little olive oil and she has a paste she can use in meatloaf etc.
