  1. Have you tried Chebe bread? (www.chebe.com) Hubby and I just finished some breadsticks I made with parmesan and green chilis that I dipped in a bruschetta topping. I made the bread sticks flat and about an inch wide so they are just right for dipping and the texture is chewy. The parmesan in the Chebe went wnderfully with the tomato/garlic/olive oil...
  2. Donna, I'm in Texas and I have to do disaster planning for my group at the office. In addition to hurricanes and torandos, we have to consider floods, power outages, chemical spills (typically truck or train hauling chemicals), contamination of water supply, grass fires and of course terrorist-induced mayhem. If nothing else, almost everyone lives near...
  3. I use B-12 Blast sublingual drops from Bricker Labs. 1000 mcg. of B-12 and 400 mcg. of Folic Acid (per dropper full). I checked with them on 6/18/07 to verify that it's gluten-free and it is.

  5. Hubby decided to go with a completely gluten-free house after all that. We went through the pantry and gave away everything that had gluten in it (he eats buckwheats for breakfast now). Funny thing is we gave most stuff to my Mom and she was diagnosed with Celiac a year later.
  6. I hope you enjoy it. My hubby commented this morning on how the flavor and texture are even better after the first day. Most gluten-free stuff has to be refrigerated but these muffins just sit on my table and they don't go stale. The flavors meld and they just get better. I have to walk right past a muffin shop to get to my office but I remember their...
  7. I love that drink! The ginger flavor is awesome! I hadn't really tracked it to intestinal issues but it tastes great. I know it says it's good for practically everything but I don't really care -- it tastes good.
  8. I didn't believe the reaction could be so sensitive that a peck from my hubby after he ate gluten could make me sick. We've been married 20+ years and I'm talking a goodbye peck in the morning, not a major lip lock. I kept getting mild gluten hits and couldn't figure out where it was coming from. The sneaky man keep track for 2 weeks and didn't tell...
  9. #1 -- It only gets easier once you get started #2 -- Just in the years since I was diagnosed, I've seen big improvements in greater selection, lower prices, greater availability, etc. I found the Hormel list to be a tremendous help at first. Open Original Shared Link Not everything is pricey stuff and you don't have to be Mama Walton and grow...
  10. Can you eat beans and corn? Those are great sources of fiber.
  11. Is there anything those guys make that isn't good?
  12. I haven't used it yet but I'm looking forward to your product review. :-)
  13. Ditto at our home. We keep Better than Bouillon on hand for when we run out. You have the heloise Cream Soup Recipe?
  14. I suspect it depends on why you are cold. Pre-diagnosis, every time I backed off of the kelp, I got freezing spells where I couldn't warm up unless I had soup or some such. That was a few years ago when I didn't know I had Celiac and wasn't absorbing my nutrients, now I no longer need it. But I really was glad it worked for me when I was experiencing the...
  15. I just realized in looking at your link that I measured the red package which has dry milk in it. I have a yellow package of the all-purpose (dairy free) at home that was a freebie from the store where I buy all of my Chebe. I promise I'll make something with it by the weekend and see if the package contains the same measurements. Sorry for the delay,...
  16. Extremes like constipation or diarrhea. Having a hectic day when I don't drink enough water and eat fiber foods like veggies, beans or quinoa is a guarantee that I'll have a problem. At least recovery is now down to a couple of weeks instead of months.
  17. My Mom has it and my sis has such a severe wheat allergy that she can't eat enough to test positive. When I was diagnosed, the health crisis was brought about by severe sciatica and anemia. The doc originally thought I had colon cancer because I was so anemic, Celiac was the good news. I was so deficient in folic acid and B vitamins that my body's nerves...
  18. Just FYI, my sis took all of her supplements but couldn't absorb them. Her bones became depleted during the time the bypass was in place but it didn't become apparent until about 5 years after the reconnect. It's been over 12 years since then and she's had major problems with hairline fractures and bones not healing after surgery. I am obese and Celiac...
  19. She needs for her primary care doc to do the Celiac blood test and probably should go to a gastroenterologist for an endoscopy and biopsy. You may find some of these articles helpful: Ataxia, Nerve Disease, Neuropathy, Brain Damage and Celiac Disease https://www.celiac.com/st_main.html?p_catid...-21107209735.70
  20. I made parmesan breadsticks with green chilis and cooked them to a crunchy/chewy texture. YUM! A red pack of basic Chebe mix contains 2 cups and 1-1/2 Tbsp. of mix. This was measured the way they taught me in Home Ec -- spooning the mix out into the cup measure and leveling off the cup. If you were scooping it out of a bag, it would probably be 2 cups...
  21. Tinkyada pasta is gluten-free and no one at my office has been able to taste the difference. And I just had a great piece of yeast bread, Pamela's Wheat Free Bread. It's not hard to make. If you get in touch with your local Celiac group, they can help you through this transition. A List of Local Celiac Disease Support Groups/Chapters https://www...
  22. Lisa, the diagnosis of Celiac was very good news for me -- my doctor had prepared me for colon cancer. Also, depression is one of the symptoms of Celiac and it gets better when you've been gluten-free for awhile. The great thing about having Celiac is how much your health improves once you go gluten-free. It's difficult at first because there are a lot...
  23. I would make sure the Army knows what you will need and what will happen if the cook messes up. Recently, a guy spoke to our local Celiac group about his experience but he was stationed on a sub. When he was diagnosed, they allowed him to finish out his enlistment on land where he could get access to gluten-free food. But their official response was that...
  24. Please don't take my post as any slam on my Mom -- she followed the prevailing wisdom of the time as dispensed by the doc. I don't think any parent "gives" their child Celiac (except through their genes). Some people have Celiac from the beginning, some develop it as a response to some event. I honestly wonder how much of a difference does it make...
  25. I have to give the hospital my Mom was in some credit. With fluorescent notecard on the door and all over the room, they did make sure she received a gluten-free diet. What they missed was that the doc said no solid foods for 24 hours after surgery and when I walked in the next morning, she was chowing down on ham, eggs and grits! Fortunately, she didn...
