BTW, the pizza crust turned out great! It reminded me of the homemade pizza crust a woman used to make for fundraisers at the church I grew up in. Non-Celiac Hubby said it was really great too. -

I agree. There has been much discussion on this board about the value of official diagnosis (pro and con) but I think a clear diagnosis has much value. Some of it seems to depend on how well you think of the average doc. For some people, a clear diagnosis just isn't possible in the standard medical world. My local Celiac group gave us a warning before Halloween last year that mini-candy bars are not considered safe because, according to the manufacturer, they don't stop the equipment to clean between flavors. Pamela's Wheat Free tasted great and didn't have to be heated to taste good. It didn't have to be refrigerated to stay good either. My sister nicknamed me "Canary" because I was the first one diagnosed (canary in the mine) and spent a year with it being "my problem" until my Mom was diagnosed and then my sis started having so many problems with healing from a surgery until she went gluten-free. -

Tinkyada does make a large shell pasta, Brown Rice Grand Shells. Open Original Shared Link But from what I see on their website, you have to buy 12 pkgs. at a time if you buy from them. It does have a long shelf life, but that's more than I can picture using in the next 5 years. If I see single packages anywhere, I'll snap one up and PM you. -
I'm not sure how you get Crohn's. Since it was listed with the "Disorders Related to Celiac" group on this website, I assumed it was one of the many things you can develop if you continue to irritate your immune system. Celiac.com remains one of my key info sources. I'm still not sure of the answer, but I found the following articles interesting:
