  1. I think that it is a good idea to get allergy testing done, just to amke sure that you don't have any onther major allergies that may be causing your symptoms. But if you want to get re-tested for celiac disease, it is a good idea to stay on gluten for a good solid 3 months, and then get tested again. I had the skin prick test done and I was allergic...
  2. Buy lots of tinfoil and Kraft BBQ sauce for cooking meat! Before they start marinating stuff, just ask if they can set a piece aside for you in a gluten-free covered container. When they start cooking, wrap your meat in the tin foil (2 layers is good) and pour some BBQ sauce on it. I always make my tinfoil into a pan-like structure, that way you won...
  3. I know it's annoying eating out with people who you haven't explained the diet to yet and at a new place. I can automatically assume that I will have to answer 101 questions whenever I go out like that. I still have friends that don't get it. I actually ate out tonight as well and so far so good for me too I don't normally eat out either, but I didn...
  4. Diet pepsi and diet coke are gluten-free... but Kaiti is right... that stuff is not good for anyone.
  5. Nice! Hopefully more countries will start doing this.
  6. No... everything MUST have wheat in it or a dash of bread crumbs
  7. You don't need permission - you can click on your name and at the bottom of that window, click avator options. In that window, it gives instructions at the top on how to format the picture.
  8. The term "modified food starch" in ingredient lists can contain hidden gluten so you must confirm the source. You can do this by contacting the company (phoning, e-mailing, using recently updated gluten-free lists) or if the company is known to clearly list gluten on their ingredient list (like Kraft), then you should be safe without contacting the company...
  9. Your skin rash sounds a lot like Dermatitis Herpetiformis which is a dermatitis associated with celiac disease. Your regular general practitioner (GP) can test you for celiac disease (blood testing) and a Gastro-intestinal specialist (GI) can take blood tests and do the intestinal biopsy. I would go to your dermatologist and ask for a skin biopsy of an affected...
  10. My advice would be to stay 100% gluten free. Check for gluten in everything that goes in or near your mouth, even lipstick, shampoo, suncreen, ect. Also, like the others have said, eating breakfast and exercise can help. From what I have read, it is important to excersise and eat regular healthy meals.
  11. no actually, I'll have to see if I can find it. I use this recipe for stuffing: * 2 shallots, minced * 2 onions, diced * 2 celery ribs, diced * 2 carrots, diced * 6 TB salted butter (I use way less) * 2 tsp dry sage * 2 tsp dry thyme * 2 tsp sea salt, or to taste * 1 tsp pepper, or to taste * 1/2 cup...
  12. Rice in restaurants can contain gluten. You must ask if the rice is cooked in anything other than water like a broth or spices, ect. Plain rice cooked in nothing but water should be fine.
  13. I miss a lot of foods too, especially pizza. However, overall I'm happy with the diet, it's a lot healthier and I feel better Which foods are you trying to find a good subsitute for?
  14. I use Kraft miracle whip because they clearly indicate gluten on the label. any gluten would be enough to cause harm.

    ARCHIVED Shingles?

I've never had it, but my grandmother had it and it wasn't too bad for her.
  16. That is very true I'm glad that you're noticing improvements on the diet.
  17. It appears from these results that you are sensitive or intolerant to gluten. And you appear to have the gene. You cannot confirm celiac from enterolab results; however, you can tell if you are sensitive or intolerant to something. Based on these results, I think the gluten-free diet is a very good choice if you are not interested in getting other tests done...

  19. Other flours that I have used that work well are potato, tapioca, rice, and bean. Here are some that I found. Two part white rice flour Two thirds part potato starch flour One third part tapioca rice flour (Parts can be any unit of measure, cups, pounds, gallons, etc) The following combinations of flours work well together: 2 cups rice flour, 2...

  21. Most people take a few months to feel better on the diet while the intestines heal. If there was a lot of damage done, the intestines will take a while to heal. I've read on this board that some people feel better in a few days, but others, like myself, take about a year to get better. Here are some tips to get 100% results on both the dairy free and gluten...
  22. These breadsticks are very soft and chewy. I used to eat them a lot before I noticed that I had a problem with dairy. Great recipe 1/4 cup shorting 3 tablespoons honey 2 eggs 1 tablespoon yeast 1 cup unflavored yogurt 1/2 cup potato starch 1 1/2 cups cornstarch 1/2 teaspoon baking soda 2 teaspoons baking powder 2 teaspoons xanthan...
  23. yea, I think we can only put pictures in our avatars.
  24. That's great news, I go to Moncton several times every year and it would be great to have a place to eat rather than Swiss Chalet. I love Swiss Chalet but sometimes the people I'm with may get bored of it (lol). Do they have a celiac menu? if not... what do you order? I'll have to look for that around here... I'm always looking for a good Korma sauce...
