Not sure about buying flour blends, but for potato starch and tapioca starch I'd check the Chinese market and see about ordering in larger quantities. It is so cheap there. -

Sorry for the weird font...it's fixed now. I had my browser set to type Chinese and it wouldn't switch out of that mode. I could type in English by toggling to that, but the font was totally weird. GFCFSF has helped me a lot too. I am actually tolerating small amounts of dairy now and still having daily BM; I can't ever remember being this regular before. The lyme may be playing a role for me but I treated lyme for 6.5 years and had no change in the bowel stuff until the GF diet. I am quite sure that I am celiac at this point so probably altho... -

I don't know, could be. Yesterday was pretty good, and this morning I felt quite good until I ate lunch, and then about 30 minutes after that I crashed a lot, not okay yet. I agree, that error margin shouldn't be. But I know that is the case, maybe they just don't tell us that often. The Western Blot test for lyme is one example. 30% error is the best that is out there, and most labs are 50-6 0% error. But it is interesting that people get a negative test and the doctor without blinking says, you don't have lyme. That's...

You've had some good advice here and the only thing I would add is that another source of gluten is in the marinade or spices used to cook the meat, especially the SW chicken comes to mind. I'd wonder if you were adequately gluten free, since you were not highly symptomatic. I'm not suggesting you were not careful, it is just extremely hard to avoid gluten and maybe you don't know when you are exposed. I am really amazed at how well the Travacor (neurotransmitter support) is helping me sleep. Night 4 last night post time zone change, and I slept 6 hours with ambien until 5 am. That hasn't happened in several years usually it takes me 9-10 days on Ambien every night to switch. I think the Natural Calm (an easily absorbed magnesium) is also helping. ... -

I think I would request a copy of your records of the endoscopy results from '02 as well as the notes of the doctor. If there was a positive biopsy at that time, I would very much hesitate to go off the gluten-free diet. Celiac can be sub-clinical but cause so many auto-immune issues. Yes, you could have another sensitivity that has developed, many people here have had that happen. I agree about the dairy. Soy is another frequent one. Beyond that, you may need to do an elimination diet to figure out what is going on.
