The store lady wasn't really saying it was/wasn't gluten-free, but I'm not sure she would have known completely. It was just frustrating to see someone buying spelt for a Celiac when I know in my heart-of-hearts it is not OK. GRRRR. Just frustrating because people like that spoil it for everyone else! Hubby wants to get tested for DH because we are thinking that is what on his hands. We do know that when he doesn't eat gluten, the rash subsides. When he eats gluten, it flares back up. I have a great banana bread recipe, also, and went to Pamela's and barely missed a beat. I've had MANY people comment that it doesn't seem gluten free. One thing to remember about Pamela's is that it has the baking powder already in it, so you may want to adjust accordingly if need be. That is awesome! I wish I could keep my son's school from using Cheerios, et. al. in projects. They used oatmeal for a project at Christmastime (reindeer feed or something) and I about panicked! He doesn't have gluten problems, but his sister does and I hate bringing that stuff into the house! -

One word: Pancakes How? Pamela's pancake mix. My daughter's 10th birthday was a sleepover and I had to make breakfast for 12 girls. I made the pancakes and no one questioned the gluten-free status. You can make them in advance and microwave or make that morning and keep warm wrapped in foil. So so so so good! -

We make what we call "fat eggs" We take a small glass pyrex dish and spray it w/ oil (for no sticking) then lightly beat an egg and nuke it for 35 seconds. It is soooo fast. Sometimes we pre-make egg cups for the week and make a scrambled egg/veggie mix and bake in cupcake tins for single-servings. Also very quick to reheat and eat. -

My daughter eats that, the Chicken/Rice/Vegetable, and the corn chowder with no problem. I think it's ConAgra and they are good labelers. -

My daughter had eczema prior to diagnosis and it went away completely after she went gluten free and flares up again if she gets glutened. She had tummy aches, headaches, and dark circles as well.
