Those are all really good suggestions and thank you! I'm sure there are a lot of things I'll ask for that won't happen, but this opportunity doesn't come around very often. I know a salad bar is in the plans, so prepackaged dressing and croutons are definitely something that I will note. Even having one meal a week or some prepackaged safe allergy... -

I'm in Colorado and have easy access to many Udi's products. I can send you 1-2 to try if you want. Honestly, Udis is not my favorite. There's another company called "Outside the Breadbox" that we prefer. The softest dinner rolls EVER, plus hot dog buns that are to die for (and I'm not even gluten-free and I like them). -

My daughter does not have asthma, but suffered from persistent sinus infections prior to her Celiac diagnosis. After diagnosis, the sinus infections cleared up (as did her Celiac symptoms). Whenever she is accidentally glutened, though, about a week later she comes down with a head cold that takes about 2 weeks to clear. Blech. Anyway, I'm not surprised... -

We avoided it for a long time, too, until we did some reading up that much of today's bleu cheese is started synthetically. We buy store-brand (Kroger) blue cheese crumbles regularly with no problems. -

I'm having the Cranberry Turkey Medallions which also says gluten free. It is a Weight Watchers Fruit Inspirations by Smart Ones meal. Not too shabby. I'd give it an A- for quality and a B+ for flavor. -

I don't know about the MSG in the teryaki. It's not in the sweet and sour, though. My daughter feels yucky after too much MSG also. She can only have it about once a week without feeling wretched. -

My Celiac daughter has ridiculously long, dark eyelashes! So long that when she was a toddler/preschooler, the top lashes would slide into her lower lid when she was sleeping and we'd have to gently pull them out in the morning! She will never, ever need mascara! She has blue/gray eyes, though.

I've been interested in this topic lately as well. My daughter was diagnosed with Celiac about 2 years ago. My Hubby (who is not my daughter's biological dad) discovered his own gluten intolerance when we removed gluten from the home and his skin rash and bowel problems cleared up w/out gluten. We're big fans of Chebe. We usually make golf-ball size rolls and as soon as they are out of the oven, place them into a gallon-size, plastic zipper bag. They taste best after about an hour. Wow! Thanks so much everyone for the warning about Bob's Red Mill! We use it a bit when frying (not healthy, but goood!) but I didn't think about how it would react baking. I'll try the rice flour/potato starch/tapioca flour blend as I believe I have all those on hand. Should I use a splash of xanthan gum? -

For the most part, my daughter, 11, rocks at the gluten-free menu. We made our longest stretch without a glutening for 6 months!!!
