My reactions would be horrible and I don't have enough sick days to try it. But I can understand why you did it. I had cravings for the first 3 years. It gets better. -
Another scary part is that it's so hard to wash off the outside of the produce, too. It's hard to get away from e Coli, like you said - it's just part of nature. And it lives in/on us, too - that's why we wash our hands before we eat.

I see that you're feeling better... but although you've eliminated a lot of foods, you're still eating many of the foods that people on this forum have problems with. Dairy, nightshades, corn, eggs, and rice. I don't think you need to do the GAPS diet to pin down the problem (if you have one). Since you're feeling better, maybe you don't have problems with... -

Happy to hear that you're feeling better. I had the same reaction! I didn't have to stay on the diet forever. I started adding other foods back in at about 11 months. I'm still mostly SCD, but not completely. I feel great now! -
Not to worry, I still plan on doing that. Can't pass up the excuse to frighten showroom salespeople.

I had the same problem as you, but I found relief after going on the Specific Carb Diet. I know that a lot of people have luck on various elimination diets. You might try one of those and start with a few foods you can eat and work upwards instead of eliminating foods you think you can't eat until you feel better. -
I talked to my boss yesterday - a chemist in her previous life - who assured me that the process they used to create the corn-carpet changed the corn into a synthetic material. So no worries! It's set to install next week. Thanks for the lively discussion!

It's my understanding that since you have Celiac disease, an illness that is covered under the Americans with Disabilities Act (ADA), you can bring your own "safe" food into this kind of establishment - no need to sneak it in. -

I think you should talk to them about making mistakes. Even though they're grown ups, it is bound to happen and you need to emphasize that you expect it in the beginning. They will dig their hands into the gluten-free chips. But instead of hiding it and not telling you, they should make sure to tell you and write their name on the bag (or strip your tape... -

It took about 3 years of gluten-free living for me to fully heal and handle dairy. But since I've been off it so long, I just don't like the taste of it anymore. I was lactose intolerant for a long time before my diagnosis and then abstained for several years after - so I grew to do without it and it doesn't appeal. -

Celiacs very often have vitamin and mineral imbalances because of the improper digestion of food over many years. I've got a new home that I'm carpeting next week. I've narrowed my decision down and one of them is a name-brand carpet that is produced from corn sugar - the fiber is called SmartStrand.
