ARCHIVED How Often Do You Eat?
jenngolightly replied to elfdream's topic in Coping with Celiac Disease
That's funny. I've started using "diet" in a new way since I was diagnosed with Celiac. I always used to think it meant you were eating to lose weight. Now I throw the word around all the time, but I forget that most people still think it means you're trying to lose weight so when I say "I'm on a gluten-free and corn-free diet" people get this shocked look... -
I used to have moderate hay fever, but after going gluten-free and corn-free they've significantly decreased.

ARCHIVED How Often Do You Eat?
jenngolightly replied to elfdream's topic in Coping with Celiac Disease
I eat throughout the day when I get hungry with mostly whole foods. I eat one larger meal with my family in early evening to make sure I get proper nutrition. If I don't eat like this I get grumpy and start craving non-whole foods like potato chips and chocolate. -
ARCHIVED Any Celiacs Who Decided To Be Completely Grain-Free?
jenngolightly replied to Evangeline's topic in Food Intolerance & Leaky Gut
Me too! -
Try an aged cheese like cheddar which has very little lactose to see if you have the same response as you did to the Havarti. I can't have lactose, but I can have casein. Thank goodness! Couldn't do without my butter.

ARCHIVED Allergic To Everything. Help! What Can I Eat? Anyone Else Like This?
jenngolightly replied to MargoS's topic in Food Intolerance & Leaky Gut
When I started my restrictive diet, I listed all of the things that I COULD eat and then found ways to mix and match them to make interesting meals. I also found that I grew to like foods that I was previously very picky about. I started eating meat and enjoying it, because I had to eat it. You might find that your tastes change because they have to change... -
ARCHIVED High Fructose Corn Syrup
jenngolightly replied to Woolygimp's topic in Food Intolerance & Leaky Gut
I just found Sierra Mist Natural - finally! A soda that's not made with HFCS! -
ARCHIVED Boarding At My Sister's For A Bit
jenngolightly posted a topic in Coping with Celiac Disease
While in search of my own house, I'm forced to live at my sister's for a while - could be days, could be weeks, hopefully not months! She's great and "gets" Celiac, but no one in her house is gluten-free. She has two kids, and her 4 year old daughter, Em, loves me to pieces (and it's reciprocal). My kids are staying with their dad, and I'm moving my bed... -
ARCHIVED Gluten Associated Sensitivity & Cross Reactive Foods
jenngolightly replied to laura4669's topic in Food Intolerance & Leaky Gut
I went gluten-free and still had some of the issues you described. When I went on the SCD diet last May, those issues all cleared up and I feel great! Better than I have in 10 years at least. Best of luck. -
ARCHIVED How Long Have You Been Diagnosed?
jenngolightly replied to Noglutenformethanks's topic in Coping with Celiac Disease
I was diagnosed with Celiac 3.5 years ago. However, I never felt completely well even on a gluten-free diet, so I went on an elimination diet and last year I found out I had a tree-nut allergy and corn-intolerance... now I feel really great. -
ARCHIVED How Do I Handle A New Job?
jenngolightly replied to jasonD2's topic in Coping with Celiac Disease
This is really sad. Isolation is not a cure for Celiac - and not going to work events can be damaging to your career. You may be told that it's optional, but when your boss knows when you aren't there. When you're ready, you can learn ways to compensate for these kinds of situations by either eating first or bringing your own food. I bring my own food... -
ARCHIVED Finding Out Something I Was Told Was Gluten Free, Actually Isn't?
jenngolightly replied to CourtneyLee's topic in Coping with Celiac Disease
It sounds like this cafe really wants to cater to the gluten-intolerant population. If they are claiming things are gluten-free, but aren't, then it's clear that someone is screwing up. Either the owner/manager doesn't know that an ingredients in the recipe(s) is gluten, or there was a mix-up and the cake was contaminated. The best thing you can do is to... -
I'm allergic to nuts and can't do corn syrup, so it's pretty hard to find quick, pre-made snacks that don't need to be refrigerated... I'm on a tight budget so I don't buy pre-made food often, but here are a few that are good for me - fruit intensive because I like sweets: craisins raisins natural fruit leather dried fruit apple sauce cups

ARCHIVED Allergy Testing This Week. What Should I Ask For?
jenngolightly replied to ilikepie's topic in Food Intolerance & Leaky Gut
I just dug up my old IgA and IgG tests from when I was first tested for Celiac in 2007. They caused false negatives and I never knew why, but your posts now explain it clearly. My IgA level was 3 and IgG was 0. That's pretty deficient. I'm not sure if that warrants a trip to the doctor... I'm a little shaken up now. -
What kinds of sugars are you supposed to avoid? Refined sugar? Fructose? Can you have honey?

ARCHIVED Losing Friends Because Of My Food Restrictions
jenngolightly replied to GlutenFreeManna's topic in Coping with Celiac Disease
Oh - I also wanted to say that after I was prescribed an epipen, my anxiety about food went way down. Just having it on me made me more comfortable so I could go out and interact in a world of nuts (the food kind) I hope your epipen gives you some peace so you are able to go to homes of friends without being terrified. -

That sucks. Have a gluten-free {{{hug}}} from me. -
ARCHIVED Gluten Free...just Because
jenngolightly replied to NorthernElf's topic in Coping with Celiac Disease
I agree. I wonder if this freedom from caring comes with experience or age? I'm comfortable with my lifestyle and I couldn't care a bleep about what other people eat. I also hate to hear, "I'm sorry" and get the pity-face-- as if not eating their food is devastating for me: "I'm sorry you can't eat this tuna slop on old rye bread that we ordered for everyone... -

Interesting - I'll have to follow up on that. Thanks for the info. -
It's a steep learning curve and you've just started the climb. Be kind to yourself and celebrate your successes! Woo hoo, you changed your toothbrush! {{{Hugs}}}

ARCHIVED Cooking From Scratch...
jenngolightly replied to Monklady123's topic in Coping with Celiac Disease
I didn't know how to cook when I was diagnosed. Then I was slapped with a very restrictive diet about a year ago - no sugar, corn, soy, lactose, grains, etc... What helped me was to have a well stocked kitchen with great kitchen appliances. It was expensive, but it makes cooking fun! If you have everything you need at your fingertips and you don't have... -
ARCHIVED Allergy Testing This Week. What Should I Ask For?
jenngolightly replied to ilikepie's topic in Food Intolerance & Leaky Gut
My allergy testing was a complete waste of time and money. It was obvious that I was allergic to certain foods-I had very allergic responses when I ate them. The testing was surely just to support those allergies, right? Then why do them? It cost thousands of dollars! And guess what? The skin pricks came back with all false negatives. It showed I was allergic... -
ARCHIVED Food From Unknown Kitchens
jenngolightly replied to seezee's topic in Coping with Celiac Disease
Never eat food from an unknown source! About your mom... there are people of a certain age who still think that it's rude to not eat food served at another person's house. It has to do with Emily Post and her rules of etiquette. If you approach it from this direction, you might get your mom to hear you. "I understand that you think it's impolite to not... -
ARCHIVED I Must Apologize
jenngolightly replied to jenngolightly's topic in Coping with Celiac Disease
I'm quite sure I threw up because of the sticky-sweetness of the punch because I don't eat sugar or artificial sweeteners. The mixture was gluten-free. Yes, it would be great if I could immediately vomit from gluten. It's funny you wrote this now because I was at the grocery store and in the juice isle yesterday for some reason. I saw a jug of Hawaiian... -
