I liked Udi's, but it was hit-and-miss. Like you said, sometimes it was quite dry. I don't like Rudi's because it's too light/airy for me. I like substance/weight to my bread. I switched to O

ARCHIVED Do You Eat Foods Produced On Shared Lines?
jenngolightly replied to zus888's topic in Coping with Celiac Disease
This might help - I'm allergic to nuts. When I eat food that doesn't have nuts, but have been produced on lines that have been used for foods containing nuts (or facilities that produce foods with nuts), I get severe allergic reactions. This is why I avoid things that are gluten-free but produced on shared equipment. It's just like nuts - they can't get it... -
ARCHIVED Breaking The Vicious Cycle
jenngolightly replied to cozynana's topic in Coping with Celiac Disease
I follow the SCD diet. I'm 11 months in and feel fantastic! I was really sick before doing the diet and missed a lot of work. Now, I'm healthy but I have a very restrictive diet and have to make my own food. You get used to it, though. If you find that you are having problems with food other than gluten, I recommend an elimination diet. SCD is very hard to... -
ARCHIVED 3Rd Time's The Charm?
jenngolightly replied to Strawberry-Jam's topic in Coping with Celiac Disease
It doesn't really end, you know? If you're intolerant to multiple foods, you're always on the look-out. I have this problem, too. The good news is that you'll find your go-to foods and you can eat these without worry. If you want to add something new, that's when you have to worry all over again. Also, when you go out to eat or eat at someone's house.... -
ARCHIVED I Need Some Input About Allergy Testing, Please
jenngolightly replied to cahill's topic in Food Intolerance & Leaky Gut
Allergy testing is expensive! Think thousands of dollars. I think my bill ran to 7,000 or more for both prick and blood tests. I don't know if a regular doctor can do prick tests. I got tested and came back with false negatives. But that's super-rare... I live in a major city and went to a big hospital to get the tests- my doctor said he'd only seen... -
ARCHIVED How To Eat At A Restaurant If You Have A Tree-Nut Allergy
jenngolightly posted a topic in Food Intolerance & Leaky Gut
I was diagnosed with a tree-nut allergy last summer. I rarely eat out, and as you can see, it hasn't been an issue for over 6 months. But I expect that I'll eventually be faced with the opportunity to eat at a restaurant and I don't know how to handle this allergy. What do I need to know? What if they cook with a nut-oil? Almonds are devastating to me. How... -
ARCHIVED Does This Annoy You?
jenngolightly replied to jasonD2's topic in Coping with Celiac Disease
OMG. I haven't eaten out since I got my tree-nut allergy diagnosis last summer. Now I'm scared to death! What if they pick a walnut out of my salad? -
ARCHIVED Was Just Given A Short List Of Foods To Avoid
jenngolightly replied to beadlavada's topic in Food Intolerance & Leaky Gut
I follow the Specific Carb Diet which prohibits those foods - so if you search for recipes that follow the SCD diet, you'll find things that you can eat. There are whole websites devoted to recipes for the SCD. I don't eat anything processed. It's gotten expensive, but I feel wonderful! You can also make your own yogurt that's lactose free - it's the 24 hour... -
ARCHIVED My Diet Sucks - Major Vent
jenngolightly replied to julandjo's topic in Food Intolerance & Leaky Gut
I was also very sick last year and couldn't eat many foods. I took on the specific carb diet and have been on it for 11 months. It's done wonders for me. I'm still very restricted on my diet, but I can eat about 50-60 foods/spices/oils/etc now. One of the things it suggests is to cook all fruits and veggies (and to peel the fruits and veggies before eating... -
ARCHIVED Anything Help With The Brain Fog?
jenngolightly replied to healinginprogress's topic in Coping with Celiac Disease
Those are the days I love to take naps. But I recommend a brisk walk around the neighborhood. It helps when it's a little cold outside - if it's hot out, that makes my fatigue worse. -
ARCHIVED What's With Doctors?
jenngolightly replied to mbrookes's topic in Coping with Celiac Disease
And this is exactly why it takes us so long to get a correct diagnosis. I hope you took a few minutes to get him up to speed. Doctors are really busy and I doubt he'd take the time to look it up later. -
ARCHIVED New Food Allergies And Family Doesn't Understand
jenngolightly replied to GlutenFreeManna's topic in Coping with Celiac Disease
Yes, my regular doc prescribed an epipen and an albuterol inhaler. In addition to nuts, I'm allergic to many seeds, too. I'm thankful that I can still eat peanut butter - (peanuts are a legume). I can't even touch nuts because I'll break out into a rash and have a hard time breathing, so they can't be in my house. I have my own office and computer at... -
ARCHIVED New Food Allergies And Family Doesn't Understand
jenngolightly replied to GlutenFreeManna's topic in Coping with Celiac Disease
Get an epipen!!! I developed food allergies in the past year and I'm over 40. My doctor immediately prescribed an epipen, even though my allergic reactions haven't been that bad. Since the allergy is new, you can't tell when the reaction will decide to accelerate, you know? I keep it with me in case I develop a reaction to something and things go terribly... -
I follow the Specific Carbohydrate Diet which helped me eliminate all processed foods. I found it easier to eliminate processed food by following a prescribed diet than by just deciding one day to stop eating certain foods - I'm not that self controlled! It wasn't easy, but because I used the SCD diet, I found a lot of help from online forums, web sites,...

Even after I was gluten-free for over 2 years, I was still really lethargic. I was so tired, I'd come home from work and lay on the couch. I'd sleep away the weekends and my kids and husband would go out and do family stuff without me. Last May I decided I was tired of having no energy and decided to do an elimination diet. I started a really extreme diet...

I've been on the Specific Carb Diet for 10 months and have more energy than I've had in years! It's quite similar to Paleo. I eat quite a lot of fruits on this diet - I eat mostly fruits, vegetables, and protein. I don't eat lactose, grains, corn, soy, sugar, or starchy vegetables. Of course I don't eat gluten because of Celiac. I'm allergic to nuts, so...

ARCHIVED gluten-free And Eating Disorders
jenngolightly replied to kyga2's topic in Coping with Celiac Disease
Personally, as a person who's suffered from ED, I think that you never conquer an ED. I consider myself in remission, but there's always a chance that it'll creep back - it's come back 2x as an adult. You don't outgrow an ED. For me, I have to stay in control of the food and not let it gain control over me. I've learned as much as I can about Celiac, science... -
What normal person does that? Even if you weren't gluten-free, it's completely inappropriate. Emily Post is turning over in her grave. Unfortunately, you're battling more than ignorance here, you've got someone who has a problem with boundaries in general, so even education about Celiac may not completely "cure" this person. Do what you can to educate her...

I think this is an important post. You've shown that even after 10 years, you'll still miss food. That's okay! For me, every year gets easier, but I still miss certain foods. What I've found, though, is that I don't dwell on it anymore. I can pick up a pizza for my kids and have a short pity-party for myself, but quickly shake it off and make myself some...

I miss fully participating in work functions. Today we had a university luncheon/lecture. They always have such great food and I feel so wimpy with my homemade lunch. What I bring is delicious, but watching all the people around me eat beautiful catered lunches makes me long for when I could just eat with the crowd and ooh and ah and savor the delicious desserts...

ARCHIVED I Must Apologize
jenngolightly replied to jenngolightly's topic in Coping with Celiac Disease
I've found that most times people are pretty nice about my diet, but I wonder if deep down they don't really believe that you can be THAT resolute about not eating things that you can't tolerate. Especially for medical reasons. As if the doctor was SURE I'd drink fruit punch at that moment because it was medically necessary (thanks Roda for clearing that... -
ARCHIVED Buy Noodles At Asian Markets!
jenngolightly replied to Kimbalou's topic in Coping with Celiac Disease
Can you tell me what other ingredients are in the noodles? I'm trying to find noodles that I can eat. Thanks. -
ARCHIVED Still Bloating After 2 Months?
jenngolightly replied to Jamie-S's topic in Coping with Celiac Disease
I'm confused that you couldn't find gluten free items where you live now since most foods are naturally gluten-free. What have you been eating since January 1st that you weren't eating before? Did you add something new or dramatically increase the intake of a certain food? Do you keep a food diary? That will help you pinpoint which food is giving you... -
ARCHIVED My Parents? I Need Advice!
jenngolightly replied to guitarchik's topic in Coping with Celiac Disease
The other posts are so great. You'll definitely find support here if you want it. Another consideration for home - will your mom give you a grocery allowance? You can spend this money on food for you? Maybe she can take you and then start seeing the things that you buy and make. There's nothing like a wake up call when your kids start eating more healthy...
