Celiac.com - Celiac Disease & Gluten-Free Diet Support Since 1995

  1. I became corn-intolerant after I went gluten-free. My reactions are similar to gluten reactions. The hardest adjustment for me is that almost every packaged/processed food has corn as an ingredient, so I have to make all of my own food. It's time-intensive.
  2. It used to be every 7 to 10 days for me... all my life. Now 2 or 3 times a week and not easy to pass, but easier than before going corn-free last year. That's why I think something else is still going on.
  3. I was on a very strict diet last summer - had around 15 foods on my list - and my son and I did an 8 day road trip around New Mexico. It's definitely doable! We skipped the fast food restaurants entirely and brought our own food with us in cooler and boxes. I couldn't do the continental breakfasts, but I could make my own cottage cheese with blueberries and...
  4. I think this is true in theory, but I've been on committees where this doesn't play out. If two potential employees are similar in skills, any negative might weigh against one of them, whether it's against the law or not. However, if that person is clearly the best candidate, the rule is enforced. We might think that Celiac is no big deal, but there are...
  5. Agree. When I first went gluten-free I hated the texture of baked goods - now I love them, and they're treats that I give myself very occasionally (even bread). For my birthday I made the new Betty Crocker gluten-free cake and topped it with homemade gluten-free corn-free chocolate frosting. It was delicious! Perfectly moist and chocolaty with rich, creamy...
  6. I wouldn't go. If everyone agrees that it would be a huge help, then it sounds like she has a large support network. Can't anyone else go? If you have the money for a plane ticket and no one else can afford to go - buy them the plane ticket. Your health is as important as your friend's need for a flight-buddy. It's unfortunate that you don't have a little...
  7. This happens to me. :-) When you get good at making gluten-free food, make sure you bring enough for everyone. But don't do this without checking with the host or hostess first. Some people are offended if you bring a dish without asking.
  8. I worked in a "sick" building once and everyone felt this way. It doesn't have to be an old building to be a "sick" building. Are you the only person who feels like this when working in this environment?
  9. I'm wondering if I should make my house gluten-free. I got rid of my husband who was putting gluten in my food "just to see if you'd get sick." So now I'm left with just me, my 19 yo son, and 15 yo daughter. We eat mostly gluten-free anyway... What do you all think? What's your experience and why did you choose it?
  10. I got the keys to my new house yesterday and all the appliances work! I haven't had an oven since last October and my cook top hasn't been fully operational for years. I'm more excited about the appliances than anything else. The maple full length cabinets are beautiful and have slide-out shelves. There's even a huge pantry! It's an open floor plan so I can...
  11. I've also heard that Europe is very Celiac friendly, even Italy! Be prepared, make sure you write your dietary limitations on a card in the native languages so you don't have difficulty explaining your gluten issues. I think my Dummies book had info about accommodations for Celiacs in Europe. I remember that the farther north you go in Europe, the more common...
  12. Sounds like a scam. You should ask your doctor or a lab technician if this would be enough blood for an accurate diagnosis.
  13. After you start reading past posts on this forum, you'll see that doctors don't know everything about nutrition. A lot of people here distrust their doctors because many have been given bad information. There are some people (me) who have good doctors, but I have read some horror stories about doctors that give you doomsday diagnoses that turn out to be complete...
  14. My family still eats gluten, but we got rid of wheat flour the moment I was diagnosed. They can buy fresh bread or make a batch of gluten-free bread if they get the urge, but I don't want gluten floating around the house. It will get on your counters, floor, walls, mixer, dishes that were left out, sink, faucet, table, anything in the kitchen. I'm so sorry...
  15. It might be zero if you have IGA, IGG, or IGE antibody deficiencies like I do.
  16. We use the squeeze mayo. In fact, if anything comes in a squeeze bottle, that's what we buy. If you are budget conscience, you can buy your own squeeze bottles and transfer condiments into those. Even if I wasn't gluten-free, I'd buy squeeze bottles. It's nasty to see those little crumbs and unidentifiable specks of other food sitting in the margarine or...
  17. It sounds like it could be contact dermatitis or allergies? Are you touching things that you don't normally handle? Maybe you're taking a class at school that makes you touch chemicals or wood or something? Do you have hay fever? I get problems with my fingers like you've described when I eat nuts because I'm allergic to them. They also get super dry and...
  18. Grain free wasn't hard for me. It was hard to feel full, though. Grains give you that bulk feel in your stomach. I recently reintroduced white rice and although I feel full, my C has returned - not as bad as when I had a lot of different grains in my diet, though. Thinking I need to go grain-free again. Bummer. I was on a strict SCD diet for a year and...
  19. Do you have an epipen? You should be prepared in case you accidentally eat something that has dairy. My nut allergy has gotten worse with age and doc gave me an epipen even though I haven't needed it.... yet. Better to be safe than sorry.
  20. Thanks for all of your replies! The restaurant is a little place in Denver called Sushi Den. If you live around here, then I highly recommend! I don't eat sushi but they have lots of other foods. Check out their website if you want to go because it's quite extensive. I'll def go back.
  21. Preface - haven't eaten out for 8 months. I can't eat gluten, corn, dairy, or nuts. I don't eat processed foods. I've been dreading this day for a month. We had a going-away lunch for a colleague at a local sushi place and I've been getting more and more anxious as the date approached. I even thought of calling in sick, but I really like this woman and...
  22. I don't know what you exact diagnosis is, but hives are an allergic reaction. If you have Celiac, then you have an autoimmune disorder and is not an allergy. If you have a wheat allergy, then hives are something to be expected. If you have Celiac and are getting allergic reactions, then you need to find out what food is giving you those symptoms so you...
  23. I don't understand. Are you having the same pain as before? Is it better? Worse? Different? In my opinion, if you had positive blood work to confirm Celiac, then you have a positive diagnosis. Your original doctor must have thought the same thing because you got the diagnosis based on the labs. Those labs must have been pretty convincing along with...
  24. A note: you might be getting delayed reactions to foods you've eaten, so don't suspect it was something that you just ate or recently ate. Some people get delays of one or two days! I suggest keeping a food diary of everything you eat and when symptoms occur. You may find that a particular symptom always happens one day after you eat [blank]. Another...
  25. I'm glad you said that. I was starting to wonder if I had candida because I'm seeing it pop up all over the forum.
