  1. Not Ursula but I make schnitzel fairly frequently. I just dip in egg, rice flour, egg again and then gluten free bread crumbs. They taste pretty good to me but I'd certainly be happy to hear from anyone who has made these with other flours and has a favourite.
  2. I'm making an Angel Food cake today for our Easter dinner dessert. I am serving it with whipping cream with mango nectar whipped into it and fresh sliced mangoes. I'm drooling already. lol
  3. They were very insensitive and their behaviour spoke volumes about them. You showed yourself to be the better person by just walking away despite how you were feeling. Feel good about that.
  4. I have four children as well but they are older now (almost 20, 12, 12, 12) so life has become much easier. I still have to drive the triplets to all sorts of places but at home they are of an age that they are a great help to me. I have been teaching them how to use the stove (they were too short until now to learn it safely - I have a gas stove) and they...
  5. You're welcome. Enjoy.
  6. Yes. The more fatigue I have at the end of the day the more activity that seems to be commencing in that area. Perhaps all my bacteria is having a party at my expense. lol
  7. Make this instead. The recipe is from the Bob Red Mill site and is very good on it's own or used to make a trifle with. I've had non celiacs ask for the recipe. Yellow Cake - Gluten-Free Ingredients: 6 Tb Unsalted Butter (room temperature) 1 cup Sugar 2 large Eggs, beaten 1-3/4 tsp Grated Lemon Peel ( I add
  8. If I ate that much chocolate I would be extremely nauseous. For me it is the amount of fat in the chocolate and the caffeine that does me in.

Welcome to the forum. I can't help you with your quest as I never take anything for coughs or colds. I might take Buckley's if my cough is dry but never for a wet productive cough. I don't like to interfere with the bodies natural battle against the virus making me sick. Besides I've often reacted poorly to alot of medications. Hope you feel better soon...
  10. Hi Ivanna, I haven't joined the Canadian Celiac Association, they also have a Vancouver Chapter, but I did go to one of their meetings (it was held at Panno Rizo a local rice bakery). I have not been officially diagnosed either. My blood work was negative and I don't have the results back from my most recent biopsy. If my biopsy is negative I will...
  11. Thanks for the list. Amazingly I have all of those ingredients in the house including the vanilla bean powder.
  12. I don't buy baking mixes. What ingredients are in the baking mix that you recommend? Is it a mix of gluten-free flours with xanthan gum, baking powder/soda?
  13. You may not be a professional but you do have a special talent. Very impressive.

I would love to have your recipe for Black Forest Cake.
  15. Life is busy with a two year old in the house. There are alot of very easy meals that can be thrown together and still be healthy. Keep greens cleaned and in the crisper. Make a nice vinegarette (enough for a few days) then you have some greens to throw together when you want to have a quick meal of say: quesadillas, tacos, a quick saute of thin chicken...
  16. I had the same problem with spinach. It was pretty gross to be pooping out intact spinach.

It is pretty overwhelming at first but gets better as you adapt to a new lifestyle. I also have 3 constantly eating 12 year olds. I do a lot of baking (glutenfree) and they don't feel like they are missing out on much. There are some great cookbooks out there and some really great cooks that hang out in the baking section of this forum. I have learned to...
  18. I've never seen a iron panel ordered as a hematology panel. The hematology panel is the Hgb, Wbc, Differential, Hct etc... this is usually done by a machine and if any of the tests done in a panel are abnormal then a technologist makes a slide and does the differential manually. The full iron studies has to be ordered as a full iron studies (at least in the...
  19. Talk to them about your fears in the same way that you have expressed yourself here (the caring for your dear friends comes out loud and clear). Then bring some utensils and pans from home to enable you to cook without fear in their home.
  20. I've had to make that rule in my house. I was cc'd one to many times.
  21. I have not been officially diagnosed either. My mother and grandmother always had GI issues (constipation rather than diarrhea - just like me). My mom has osteoporosis (she was diagnosed years ago and is only 67 - I'm 50) and her mother died at 53 of colon cancer. I'm just not willing to take the chance. I know that I react to gluten and there are so many...
  22. I've not heard that before. Do you have a link for any further reading about this?
  23. Thanks for the info. Hopefully they don't have this or any of my other ailments but I do want a doctor to be thorough.
  24. I've had the opposite experience. People have bent over backwards with kindness to try and include and accomodate my needs. I am very fortunate to have these amazing people in my life.
  25. Susan, you have an amazing attitude towards life in general. Bravo.
