Well, it could be that your system is just generally out of whack, digestion wise. In celiac your intestines can get damaged and be inflamed / irritated on an almost constant basis. Hi Mirabella, Yep, it probably was the salad dressing. I made that mistake a few weeks ago, myself. I am trying a yeast free diet now and see if that helps the swelling. This page has some lists of things to avoid that might help, pretty far down the page. Natural flavorings, modified food starch, spices, HVP, malt, are often listed on ingredients. Going off on a tangent here... I saw this story not long ago about researchers identifying 22 more genes that are thought to be involved in Crohn's Disease. Previously the known number of Crohn's related genes was 11. The point being that we may not have all the answers yet about exactly what genes are involved in celiac disease. I have heard that sometimes some places will put pancake batter in eggs. So that would be a possible source of gluten in scrambled eggs.. Heck, I used to do that myself at home. Mix pancake batter (Bixquick) in the eggs adn they fluff up much more when cooking omelettes. Interesting info about the kidneys there. Thanks for that! -

Good going getting rid of the spelt wheat. It is wheat, but has a lower amount of gluten in it than the modern varieties. From what I have read so far it seems bentonite clay is pretty commonly used for the fining/clarifying. But there is no way to know what each vinyard uses unless they reveal it. Clay doesn't sound like a bad deal at all. Seems they have a lot of options for what to use. -

I also wake up sweaty. I have a thyroid condition related to celiac called Hashimoto's Thyroiditis. I sometimes get sweaty after eating also. Anyway, you might want to ask your doc to do a thyroid panel.. -

I have read that swollen ankles / feet can be due to an allergic reaction to something. I have that problem often and especially if I have had gluten in something. A doctor once told me that it can be a sign of heart disease, due to poor circulation.. I think in my case it is allergic reactions/symptoms. -

As in the results may not be reliable depending on the materials used for the testing.
