  1. I use Carol Fenster's recipe, too. But the recipe in her book uses her blend, which also cotains potato starch. I want to say it has eggs in it, too. I used Ener-G egg replacer for most things and it works really well.
  2. Some recipes that use almond flour do not use xanthan gum. However, almond flour is not cheap either, and has a pretty distinct taste. I like it, but I don't want to use it for everything. It's pricey, but you only use a tsp or so at a time, so it lasts a long time (especially if you don't bake a whole lot) I bought mine back probably in Aug or Sept and...
  3. Thanks! That's has been in my sig for a few months now. It hasn't gotten any easier... LOL Oddly enough, I got back on my computer to do some research into diet and other issues I'm having. Glad I could help!
  4. Breakfast. I'm not sure how long it was until you ate, since you called it brunch. But if you do that regularly, it's not good for your body. You need to eat breakfast, it gets your metabolism going first thing and has been proven over and over that people who eat breakfast regularly have an easier time losing weight and keeping it off. It definitely...
  5. My friends and family have all been so great. I've been in restaurants with my mom when I've gone to the bathroom before sitting down, and when I come back there's a gluten-free menu sitting in my chair. My husband has called places before we go to see if they can accomodate us. My son now asks if something will make my tummy sick. And my friend had...
  6. Kimball offers a more complete genetic test. Enterolab only tests for the beta chain, since the risk for celiac is mostly linked to the beta portion. But, it can also be linked to the alpha chain; although more rarely. It's not uncommon to hear that doctors do not accept Enterolab. Their stool testing method is the subject of much controversy, but their...
  7. The first thing I thought was ditch the clif bars. I'm looking at one of my husband's right now: It has no wheat in it, but it has malt extract and oats. The malt extract is bad enough on it's own, and the oats are more than likely contaminated with wheat dust/flour. From their website: Cut them out and see if that helps.
  8. I know, I could make it... realistically though, will I make it myself.... Probably NOT!!
  9. Have you ever heard of or tried ghee? It's clarified butter, which makes it lactose free and casein free. I use it without any problems. It's a little more expensive, but I prefer butter over any alternatives. Somethings are worth it. As far as the egg issue: I am allergic to egg whites. So, I understand your dilemma. You can get egg replacer at the store...
  10. Well, that would explain at least why it's still being made. I tried it once... UGH!! We're not really into stuffing, we eat it every few years. I wondered why it was still around since everyone thought it was so gross. At least it has a good use!! LOL
  11. If it's glutenease or something along those lines, it's an enzyme that's supposed to aid in the digestion of gluten. The makers of Glutenease do not claim that their product is safe for celiacs, but rather those who either have a harder time digesting wheat, or are gluten intolerant for an underlying reason. And even then, only in small amounts. I take...
  12. You can develop food allergies anytime. Especially if you eat A LOT of one particular food. I'm thinking you may be more on track with the ulcer/tomato problem. Have you tried eating a tomato in it's whole form, as opposed to the processed, broken down form of it? I do know that tomato sauce + ulcer = no good. Tomato sauces are very acidic, and don't...
  13. You ped is on target with their immune system and the testing. Celiac screening is pretty inconclusive in small children, as he said. (and can continue to be, even past the age of 3) I went back and forth with the decision, too. I have a 3 yr old, and I had him tested this past Sept. I KNOW that he has at least one copy of the "main" celiac genes (DQ2...
  14. If you are back on gluten, pursue testing. But, if you feel better, then stick with it. With the celiac screening through blood, it's common to have false negatives, not false positives. We have 22 ft of small intestine, so biopsies can be hit or miss. There is also a link to wheat being problematic for sufferers of endometriosis. Which may be why some...
  15. Please share the mac n cheese recipe!!!! Congratulations, btw!! Oh happy day for you!
  16. Janet, I've heard other people say they use olive oil. How do you use it? Do you just rub it in and wash it off, or do you wipe it off?
  17. I don't know... Donna gets kind of scrappy toward the end of the season. (We have the real BBC channel at home and saw the Donna season already) I didn't watch much with Rose, but she makes an appearance at the end of the season. She's pretty tough. My money might be on her.
  18. We are big Doctor Who geeks at our house too! My husband was reading online and David Tenet, who plays the handsome doctor, is no longer in the show. BUMMER!!!! Some guy who's not nearly as cute! RWG- I think the effects on that show are pretty good, too. I was kind of surprised when BBC classified it as low-budget. Happy Doctor Who-ing!
  19. Welcome to the forum Susan! To post a reply, you can do one of two things. There is a "reply" button in the lower right corner of the dialogue box. If you click on this box, it will paste a copy of that post into your response. If you don't want a copy in your post, click on the "add reply" button below the dialogue box in the lower right side. It's...
  20. Yeah, I think at this point, it's highly unlikely to cause any damage. He may not even have a celiac gene (unless you know what you and DH's genes are). As it was, I was dbl DQ2, which puts me in the highest risk factor to develop celiac. I ate wheat ALL the time, but it wasn't until my son was born that celiac was triggered. I know your worried about...
  21. Ok all you bakers... I seriously need your help!! I'm learning a lot about baking (which just totally blows my mind! ME- a baker HAHAHA) If I have a recipe for pizza dough that calls for 1 tbsp of yeast for about 1 1/4- 1 1/2 c of flour, and I want to double it. Would I have to double the yeast? I want to make a thicker crust... you'd think I'd be happy...
  22. Nora Can you give me genetic lessons??? LOL How are you so good at this stuff??? It interests me, but when I read it, it looks unlike any language I've ever seen. Sorry for the silly interruption... carry on.
  23. Ok, I know that I cannot stay completely away from mercury, as this article brought out, but I cannot tell you HOW GLAD I AM that I don't have ANY fillings!!!! (lots of flouride treatments and sealants as a kid) And should I ever need them, they will NOT be amalgams. That is way scary.
  24. I am echoing the previous poster. Get your blood test results. You'd be surprised at how many doctors really don't know how to read the celiac panel results. You can post them here, and someone will be able to help you. Testing negative doesn't mean you don't have celiac. They are definitely not as sensitive as we would like them to be, which I'm sure...
