  1. 1. When I eat gluten, I get a horrendous headache for two days, then for the following few days I feel like my entire upper gi tract is on fire, everything I eat hurts. EVERYTHING. Then after that slowly subsides, I get a few days of reflux. Finally, after about 8 days, I start to feel normal again. EDIT: I forgot to add the irritability. WHOOO...my poor...
  2. Has anyone tried it? There's a recipe using it in Carol Fenster's book, and there was blurb about it on "The Splendid Table" not too long ago.
  3. I was thinking the same thing. Allergies can cause your pulse to rise.
  4. The genetic testing may help, but it in itself cannot diagnose her. The percentage of people who carry the gene is large compared to the number of people projected to actually develop the disease. But if she's having symptoms, has a positive dietary response, and is positive genetically, a doctor may be willing to go with that as a diagnosis. Mine did. ...
  5. The other day I made bacon wrapped dates. My husband is a sucker for dates and I'm a sucker for bacon. It was wonderful!!! Pre non-dairy days I used to stuff them with Havarti. But chevre sounds like it would be really good. I'll have to try that next. Thanks for the suggestion!
  6. Their Vietnamese Chicken Salad Rolls are sooo good! I have a Pei Wei right down the street from me, but we don't go there often. But I always get an order of the rolls. They are definitely my favorite! I've never gotten sick from eating there.
  7. So very true! As far as others opinions, put yourself in your peers' position. This is a pretty drastic change, and of course people are going to think you're nuts at first. But, after a while, when they notice that you're not feeling bad anymore, and they see that you truly are resolved to be gluten-free, it really isn't the topic of conversation anymore...
  8. How long were you gluten-free before the testing? How long did you go back on gluten before you had the testing done? Once gluten is removed from the diet, it's very hard to get conclusive blood tests. The antibodies are only present when gluten is being consumed. Welcome to the forum!
  9. As a life insurance side note: I recently got a different plan, AFTER my testing was done. I got the standard rate also, instead of the preferred. But nonetheless, I have insurance. I was totally upfront with them, too. There's no point in lying, they will find out one way or another. Mine is through Jackson. Sorry to hijack... back the ranting!
  10. I couldn't agree with that more. It makes life easier when trying to read labels. You also learn about the "stuff" they try to pass off as food.
  11. I can tolerate oats. Technically oats do not contain gluten. So, unless it was said that it contained certified gluten free oats, I would probably stay away from it. Since oats are so often contaminated.
  12. Did you get the ranges along with the results? Were those IgA/IgG ttg tests, or antibody tests, or total serum tests?
  13. For the allergy testing, no, you do not have to be eating gluten. To be tested for celiac, you do. So if you think the allergist would run celiac tests, then you need to be eating it.
  14. My GI wouldn't do an EGD on me at 6 months gluten free. He said it would probably not show anything. If we had gone the EGD route, I would've had to eat gluten for 3 months. And in light of the fact that he took one biopsy, I wouldn't rule celiac out at all. How did you feel during your month of eating gluten?
  15. Welcome to the forum! Oleoresin paprika is paprika extract. It's safe as far as gluten free goes. Most vinegars are fine, that's since been clarified but still floats around the internet. You biggest concern there is the natural flavors. There are some companies that will clearly list gluten containing ingredients, but others you may need to call and...
  16. To clarify Momma Goose's post: According to the NIH: celiac disease is a digestive disease that damages the small intestine and interferes with absorption of nutrients from food. DH is frequently linked with celiac disease, but not exclusive to. Treatment protocol is antibiotics for some, and suggestion of removing gluten from the diet. Often, intestinal...
  17. Do you already have a scheduled appointment with the GI? Mabe you can call the office and talk to the nurse and get an idea of how the GI feels about it. Or you can discuss it further with the GI at the appointment. My GI did not do an initial biopsy because when he diagnosed me I had been gluten-free for 6 months. He wants to do one maybe this spring, just...
  18. I have very low IgA, too, and it does greatly affect the test results. If your son falls below the range, and still tests positive, that would be a pretty big indicator to me. If it actually shows up on the test, even though in the low range, it may be really high for him. And with 22ft of small intestine, it's possible that they just missed a spot that...
  19. You'll actually find that there are a lot of foods that are naturally gluten-free. It's when you start getting into processed foods that you find just how overused gluten in.
  20. I know... my shining moment of idiocy. Never mind that I remind people of that stuff... (banging forehead on wall now) Glad to know it worked for you. I think they are helping, but once I feel completely back to normal I'll be able to tell.
  21. That is so very true!!
  22. I think it has less gluten than wheat, but it certainly still contains wheat. Try sorghum flour to replace wheat flour.
  23. As far as I know, there's no blood testing involved. They listen to the lungs, and there's a test where you blow into a tube that measures the airflow and pressure...along those lines. Oddly enough, I never had that test done. I just told the doctors that I was having a hard time breathing and they prescribed me albuterol, and my new GP refills that and...
  24. You're right, she probably would not test positive on a celiac panel. But they can test for asthma. I can remember as far back as kindergarten not being able to run and play like the other kids because my chest hurt. And the cough is definitely a sign of exacerbation. As for the personality, I have a 3 1/2 yr old boy, and at times I have to remind myself...
  25. As I'm sure you know, Enterolab cannot diagnose celiac or gluten intolerance. There's a lot of discussion on this forum about Enterolab's testing, but if you are having success with the gluten-free diet, then perhaps you're on the right track. Testing in children is very inconclusive, they often don't have either enough damage to show or they don...
