  1. There is an edit function! Thank goodness... so you can go back for 48 hours I think if you need to correct some spelling errors. Stay away from the 10 ton bread. You remember what regular bread tastes like, don't try the gluten-free versions for a while. Or better yet, just bake your own. It's much better!!! Don't feel like a dope, we've all been...
  2. Good to know!
  3. LOL My husband and I were talking about it yesterday. I figured someone here would have an idea... it does sound unlikely, but it never hurts to ask. That article was very interesting.
  4. If my pregnancy triggered celiac, do you think that a second pregnancy would trigger another AI disease that I would be genetically predisposed to? Like Type 1 diabetes, or lupus or something along those lines?
  5. Welcome to our corner of the earth! If no one else in your life understands, we do. We've all been where you are. The first few months are hard. Starting with feeling on top of the world because you feel so much better. Then somewhere, it hits you. How careful you have to be, how you can't have regular pizza, or beer, or whatever. How you have to worry...
  6. Yes, it's possible to be allergic to wheat, barley, and rye and have celiac. It's also possible to be allergic to those things and not have celiac. It probably would be a good idea for him to be tested for celiac. Since he is allergic to wheat, barley and rye, if he cuts those things out of his diet then he will be gluten-free. As you know, it'll be harder...
  7. That sounds really good! We make a pumpkin lasagne. Everyone always says it seems strange, but we've served it to many people, and everyone loves it. People are starting to request it!!!
  8. Sorry, it's IU. I get those mixed up a lot! I will probably stop taking the supps in the summer because I do love the sun, and I always feel my best in the summer. But for the winter months, I'm finding it is a necessity. From what I've read, we naturally make somewhere around 10,000 IU from 30 minutes of sun exposure. So I definitely don't need to...
  9. I felt better almost immediately. But the fatigue seemed like it would never end. Come to find out, I was low in vit d. SO, get your vitamins checked, especially that one. I also started taking b12 and a b complex, and that helped out, too. But the most dramatic changes have been within the past 3 weeks or so of taking 2500 mg of vit d daily. Most...
  10. I have to tell you guys about this dream. I know you are among the few that will understand... I dreamed about pizza last night!! LOL Recently, we went from having nowhere to get gluten-free pizza, to 5 locations now serving gluten-free pizza. In my dream, I was watching one of the places make my pizza, and then they grabbed a handful of regular...
  11. Thanks! I'm going to try adding the mix and the water to the mix rather than mixing first. Maybe that's what causing it to be gooey. I'll definitely try the flax seed, maybe first in a muffin or bread or something along those lines.
  12. I don't have the recipe in front of me, but one of them was a cupcake from Carol Fenster's cookbook. Her flour mix is sorghum, tapioca and potato starch. The insides were just a little strange, and I let them bake longer than the directions. Recently, I tried to make muffins using coconut flour and they were brown on the top, but like batter in the middle...
  13. I have another question to add: I'm assuming that your vegan baking does not include eggs... I'm allergic to egg whites, so I can't bake with them. Do any of you find that when you make things like cupcakes or muffins, the inside stays really gooey. I bake them longer than the recipe calls for, until the tops are starting to look really dried out. ...
  14. Thanks Darn210! Good catch; mine were certified gluten-free, but I did forget to mention that. I think I paid somewhere between $8-10 for mine.
  15. I reacted to them, too. I, however, have just changed my thoughts as to why. We have a tendency to immediately blame gluten, but I think that I'm just oat sensitive. There are quite a few people that can tolerate oats with no problem, but there are A LOT of celiacs who cannot tolerate oats. Part of the reasoning behind my new decision is that I recently...
  16. I don't do much fast food either. I find that for me, it's more "hit" than "miss". I'm pretty sensitive, too. If I must... I eat Wendy's chili. Their fries used to be on the gluten-free list, but I tried them a few times, and every time I felt yucky after I ate them. Our family doesn't really frequent McD's, except a few occasions when my husband has...

    ARCHIVED Now What?

Try not eating the rice and see what happens. If I eat too much of it, it's not so good. As for probiotics, try acidophilus. Acidophilus is especially helpful to the small intestine, which is where we celiacs need all the help we can get. You can buy it in a capsule or a powder, and forgo the yogurt. My doc says it's like eating 10 yogurts at once. It...
  18. SO MUCH! I found myself standing there, so happy that someone was calling attention to my disease. That's pretty sad, huh?
  19. They are nationwide, but I'm not sure how extensive they are yet. They started in California, and supposedly use only organic ingredients. They have a lot of really different pizza combinations, which I think is why I like them so much. You can get pepperoni, but you can also get some really different things, too. There's quite a few locations in VA....
  20. I haven't even checked to see if our Uno's is serving it yet, but I'm glad to see it's on the website menu. I did, however, try Z Pizza the other day. They are a smaller chain, but their pizza is so GOOD!! They recently released a gluten free crust, and I had a lot of anxiety about going in there to try it. But I made myself do it. I asked them how they...
  21. Thank you Laura! I just want to reiterate, that my question was not to start a debate as to whether they should be considered safe or not. Since they are considered safe, but given what is on their website, I simply wanted to know how many, if any, super sensitive celiacs could handle them.
  22. I have to eat really small meals, too. Usually plain chicken sits fairly well, bananas do ok, but I can't do a whole lot of carbs, so I have to break them up throughout the day. For the first few days after I've been glutened, I drink apple cider vinegar with water (like 1 tsp/1 oz of water) after I eat and sometimes in between. I'm not sure if the glutening...
  23. rumbles, Another thing I thought of with the apples, maybe you are reacting to a preservative in the apples. When you buy them cut up like that, they have a preservative on them to keep them from turning brown. I find that I can't eat those, and if I eat an apple w/the skin on, I can only eat organic apples. Otherwise, they give me horrible stomach pains...
  24. I'm really sorry to hear that I hope you can figure out what it is for future reference, and I hope you feel better soon!
  25. Definitely find a new doc! As happygirl said, a wheat allergy and celiac are two completely different things. You can have one or both, but being allergic to wheat doesn't make you have celiac and being celiac doesn't make you allergic. The sad thing is, when I read this, it didn't completely surprise me. I am fortunate to have a GI doc who keeps up to...
