  9. If you are trying to avoid eggs, look for gluten free recipes that contain buckwheat flour, amaranth flour, and almond flour or meal, which are all "stickier" than rice flour based recipes.   12. Ruh - oh. You're likely to get flagged and audited if you try to get funny with the tax deductions for the gluten free foods, I would not recommend doing that, even if the author said "contact a qualified accountant" for advice.
  13. Eeeew. Replacing the lactose with soy is not helpful, as many celiacs cannot do soy. Also, inulin is a plant based fiber that must be checked for sources, as sometimes it can be made from........ wheat. But a lot of time it's chicory root. Way to go, rocket-food-scientists.
